Food specialists at the Ontario Food 'Council, Ontario Department of Agriculture and Food have picking and storing suggestions to help maintain the plump, juicy freshness and flavor of strawberries. _ .. , Pick .only the firm, fully ripe berries with glossy red skin. Berries4hat are- underripe have green or white areas and an underdeveloped flavor. Cup the. berry in the palm of •your hand and snap the stem off, with.the thumb .and forefinger. This method leave the calyx and . a short pieceof stem on the berry and prevents accidental bruising or crushing. It also leaves .one hand free to hold the basket. Berries left in the , hot sun after picking fade quickly, so it's a good idea to take the picnic cooler along. This will keep the berries cool and fresh until they ... n .be put into the refrigerator. At home, sort through the berries and remove.any` that are soft or bruised. Store the 'rest, unwashed anduncovered,,in the refrigerator. •For best flavor and quality, they should be used within one or two days. Photo by Hadden's Studio MR. AND MRS. F. G.
