lover. Mushrooms literally sell •
themselves. Whether served as a
garnish with meat or poultry, or
- more generously as a vegetable,
fresh mushrooms make any meal
a•significant occasion,

grown commercially in special
houses where.'"the temperature,
humidity and ventilation cin be

Broil", browned under the

• MUSHROOM CASSEROLE
4 cups sliced mushrooms (about
1 pound)
• 1/2 cup chopped green onion
1/2 cup diced green pepper
1 1/2 cups, (6 ounces) grated
Cheddar cheese
Salt and pepper

1/4 cup milk
1/2'cup cracker',,crumbs
1/4 cup butter
Mix mushrooms, onion and
green pepper. Arrange alternate
lay.ers of mushroom mixture and
cheese in ' greased' baking dish,
sprinkling layers with salt and
pepper. Add milk. Top with
crumbs and ,--dot with butter.
,Bake at 350 degrees F. until
mushrooms are tender (about:20
minutes), 6 servings, ¶
4 cups sliced mushrooms (about ,A
1 pound)
2 cup_ s sliced onion
3/4' cup chopped green pepper
1/4 cup butter
Saute mushrooms, onion and.
green pepper in butter until
onidn is transparent. Drain
vegetables and place in greased
baking'dish.
Sauce:-
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon dry mustard
Dash paprika
Dash cayenne
1 cup milk
1/2 cup grated c eddar"cheesem
1/2 cup buttere read crubs
Melt butter, blend in flour
and seasonings. Gradually add
milk, stir and cook until smoo1'h
and thick. Add cheese and stir
until melted. Pour sauce over.

feeding program. Poultry meat is
economical and nutritious and
an excellent source of protein.

broilers already..cobked,-either
whole or in parts, at, "take-out"
establishments . or , rotisserie
counters of food stores.
If she wants to start "from
scratch" 'She may buy a broiler
and use it whdle or cut it up.,
She may then roast, fry, broil or
barbecue.: it , or its parts in a
variety of ways. . A whole
chicken usually sells for' less per
pound than one that is already
cut up. Allow from •3/4 to 1
pound per serving.

interesting flavor.
YOGURT BAKED CI-IICKEN
2 cups plain yogurt.' . '
1/4 cup lemon -juice
1 teaspoon salt
1/2 'teaspoon rosemary
1.clove garlic, crushed
1 cut-up chicken broiler (about
3 pounds)
1 cup dry bread crumbs
Combine• yogurt, lemon juice
and seasonings. Marinate chicken
-in yogurt ,mixture for 24 hours.
Drain chicken and dip into bread
crumbs. Arrange skin side up in
a greased baking dish -and brush --
with marinade. Bake ' uncovered
30 minutes at 350 degrees F,;
turn skin side down, baste and
bake 30 minutes; turn -and. bake
15 minutes longer:' 4 servings:

Slim -Trim Vegetable Hors D'Oeu>re
2 cups (1 pound) cottage
cheese
1/4 cup skimmed milk
1 teaspoon salt •'
1 tablespoon chopped chives
1 tomato, peeled and chopped
1/2, Clop (2 dunces) crumbled
blue cheese
Cauliflowerets
Celery
Sliced scored cucumber*
Carrot. curls* *4.
Sliced mushrooms
Combine cottage cheese and milk in container of electric.
Mender; cover and process at high speed until smooth and creamy.
Transfer to mixing howl. Add salt, chives, tomato and blue cheese;
mix well. Chill until serving time. Garnish with additional chopped
tomato and chives; serve with vegetables. Makes about 21/2 cups
dip.
*Score cucumber by running tines of fork lengthwise doV4n side
of cucumber. a
* *To make carrot curls, use vegetable peeler to shave lengthwise
strips from pared carrot. Curl each.strip around finger, fasten
with wooden pick and crisp in ice water for 1or 2 hours.

OATMEAL DROP COOKIES
(tried and proven)
1 cup butter or shortening
2 cups brown sugar (packed)
.2 well -beaten eggs
2"a -0'S -flour
-1 cup raisins
1 tsp. alt
1 tsp. vanilla
1 tsp. baking soda dissolved in 1 tablespoon boiljog water
40 4 cups coarse oatmeal or 3 cups fine oatmeal
Mix well: Drop ontoNgreased' pans. Bake- in moderate

"Potato Fans." These are peele
whole, . raw potat2es which are -
cut tq resemble a fan, brushed
with- litter --then--baked..... .
6 peeled potatoes (about 2
pounds)
3 tablespoons butter, melted
1 teaspoon salt -
2 tablespoons dry bread crumbs
1/4 cup grated cheese •
Cut each potato crosswise 2/3
of the way through at 1/8 -inch
intervals. Arrange in greased
baking dish, cut side up. Brush
with butter; sprinkle with salt
and bake 30 minutes at . 425
degrees F. Sprinkle with crumbs,
baste with remaining butter and
continue baking until brown
(about 20 minutes). Sprinkle
„vv,ith cheese and bake until
