Method:
8 slices enriched white bread
48 tiny strips pimento
8 pieces (1 inch long — 1/4 ineh
wide) green pepper`
Combine cream cheese, milk
and green food coloring. If a
`Tree' cookie cutter is not
available, cut each slice of bread
in half, 'diagonally. Place one
half on top of other, and trim
crusts from remaining sides.
Starting at the right angle
corner, cut across bottom of
sandwich so lengthwise sides are
even. Cut two scallops along
narrow side, to make the base of
the tree.
Spread each of two identical
sides of tree slices with two
teaspoons of cream cheese
mixture. Place one tree on top
of other. Decorate top slice with
six strips of pimento, placed like
tree branches. Place piece .of
green pepper between the two
slices to form base of tree. _

At Christmas
Apple crisp -everywhere
and have not come up with the
recipe -the lady is requesting.
However, 1 did hear from her
again last week -and she felt she
may have tut the recipe from
Tr•e London. Free Press and not
the Signal -Star. In that case, of
course, I can't be of much help
to her.
In- the 'Meantime, .the subject
of Apple Crisp has caught the
iinaginatiolr of •several women,
who 'hai-'e suggested they have
favorite recipes for this popular
dish.
This week, 1 am delighted to
reprint a recipe from a reader for
Apple Crisp containing, -pudding
powder and bran flakes: It

NICE FOR CHRISTMAS ENTERTAINING
Steamed pudding,
sweet sauce
Christmas Eve, down through
the ages, has come to mean just
as much .as Christmas Day to
many people. The tradition, very
Iprevalent today in Canada, is to
"'attend midnight mass or services, -
come home, have ,a light
after -midnight snack and theh
open the Christmas Presents
which have been placed under
the tree.
Christmas pudding made into
individual dr family' size servings
in casseroles, tin cans, custard
cups or gelatin moulds, is.
delicious with a warm sweet
sauce -on these occasions. -
STEAMED TUTTI-FRUTTI -
PUDDING
11/2 'cups enriched all-purpose
flour
1 tablespoon baking powder
1/2 cup sugar -
1 teaspoon salt -
1 cup butter or margarine •
11/2 quarts coarse fresh bread
crumbs
1 tablespoon- grated orange rind
1/2 cup slivered candied . cherries
11/2 • cups slivered or diced
Candied fruits
1 pup milk
well -beaten eggs
1/2 teaspoon almond extract
1/4 teaspoon ground nutmeg
Sift flour, baking powder,
sugar and salt into a large bowl.
Cut ,the butter in with a pastry
blender or two knives. Add soft
bread crumbs, orange rind,
cherries and fruits. Beat milk
and eggs together; add , almond
extract and nutmeg. Combine
both mixtures and blend well.
Pour half batter into each of two
well -greased (2 quart) ring
,moulds. hover tight., Place each'
on a rack in a deep kettle, filling'
the kettles with enough water to
sounds simply scrumptious and I
hope some of you will enjoy_ it.
APPLE CRISP
4 cups sliced apples
1/a cup butter
1 package (4 oz.)...butterscotch
pudding and pie filling
1 tsp. cinnamon.
1'/2 cups bran flakes
Method: Arrange apples in
shallow baking dish. Cream
butter; ' add . pudding mix,
cinnamon and cereal — blend.
Sprinkle over apples. Bake in
moderate oven (375 degrees) 30
minutes or until apples are
tender. Serve - warm or cold.
Serves 8.

OLD FASHIONED SALMON
K UT LATTEN ' (Patties)
1 can (7 3/�-oz.) B.C. Salmon
2 eggs
1 raw potato, grated
1/2 medium onion, grated
1/4 cup catsup
1/2 cup toasted wheat germ or .
cracker crumbs
3/4 teaspoon seasoned salt'
1/2 teaspoon pepper
Beat eggs slightly. Add
salmon (skin. crushed bones.

form into -patties. In skillet, fry
patties in a small amount of hot
cooking oil until golden brown,
turn and repeat.

2 cans (7-3 oz. each) or
1 can (15-1/2 oz.) B.C. Salmon
1 can (10 oz.) peas, drained
3 cups cooked brown rice
1 medium onion, chopped
2 tablespoons chopped parsley
1 tablespoon lernon juice
Salt to taste
Dash of cayenne
3 tablespoons melted butter
margarine
3 tablespoons milk
2 eggs, beaten
Pastry for 8" pie.
Flake salmon with juice.
Combine - with rest of
ingredients, except pastry, and
mix well. Line a 9" x 5" loaf
pan with half pastry. Press in
salmon loaf mixture. Top with a
layer of pastry. -

for three hours, adding more
water if necessary. Remove from
steamer and let stand about five
minutes. Remove cover and turn
onto a hot ,platter. Serve with
hot Lemon -Nutmeg Sauce.
Serves 16,20 persons.
- Rules for - makingpudding
are:
1. Grease containers well;
2. Fill only two-thirds full to +;
allow for expansion of ,the
pudding when "steaming;
3. Cap with a tight `fitting -
cover or heavy aluminum foil
pressed closely around the sides '4
of the. container;
4. Be sure that the water
reaches to about one-third of the
depth of the container used;
5. Store cooled steamed
puddings wrapped in • aluminum
foil in the refrigerator; •
6. Reheat in the oven with
foil wrapper intact or uncover
arid heat in the top part of a
double boiler over hot water.
LEMON -NUTMEG SAUCE
1 egg
1 cup sugar
1/2 tsp. nutmeg
2 tablespoons grated
1/4 cup lemon juice
3 tablespoons water
1/4 cup butter
Beat egg, add sugar, nutmeg
and lemon rind. Combine lemon
juice and water; add ' to sugar
mixture. Heat . until boiling,
stirring constantly. ..Add butter.
Cook for five mu; , tes, stirring
until butter blends evenly into
sauce. Serve hot , over Steamed
Tutti-Frutti - Pudding. Yield:
1-2/3 cups Lemon Nutmeg
Sauce.

TOAD -IN -A -HOLE
(tried and proven)
1 pound sausage
• 1 cup flour
1 cup milk
i/2 tsp. salt
2 eggs
Cut sausage in half lengthwise; bake in a 9x14 inch pan
until about half done; 400. degrees for 15 minutes. Beat
eggs until light and fluffy; add the milk and the sifted dry
ingredients; beat until bubbles appear. Pour the fat off the
sausage; pour the batter over. Bake at 400 degrees for 20'
minutes, turn off heat and leave another 10 minutes.
