Ever tried chicken with cheese sauce? It makes a highly .nutritious dish of unusual flavor. The
chicken parts are first browned on top of the stove then baked in a. shallow pan. Basting 'them with
a blend .,of milk and butter makes them delightfully' crisp. While the chicken is baking the home
economists of Canada Agriculture make a cheese sauce, savory with mustard, paprika and parsley.
At`serving time the creamy sauce is poured over the chicken.

With the arrival of the first
frosty fall days, the season for
much of the Canadian -grown
fresh produce comes to an end.
Happily, though,• there is no
season ` for" two such favorite
foods as cheese and chicken.
Canadian cheddar knows no
peer and there is a flavor to suit
all tastes. Because there is no
waste, cheese provides
economical eating. Chicken also
gives excellent value when
.'compared—with.... other—meats,
Declaring an "open season" on
these- two foods . the home
economists of the Canada
Department of Agriculture went
hunting for some ways to
combine chicken with cheese.
These casseroles and `main dishes
are the results of considerable
recipe testing. Incidentally, each
is considered a good source of
protein so together they present
.a "protein plus" dish as well as
anAinusual flavor combination.
The 'Chicken and ' Cheese
Casserole" makes an excellent,
dish to freeze, so the
tiine-conscious .homemaker may
make ,one ,,tor. now .:and freeze.
one for later: It. may be stored
satisfactorily up to three months
in the freezer. The cheese is
incorporated into a canned soup
sauce then combined with
cooked noodles before the diced
cooked chicken and frozen peas
are added. With the recipe the
home economists included
directions for freezing. "Chicken
and Mushroom ,Scallop" . also
uses diced cooked chicken which
is stirred into a bouillon -flavored
sauce in which cheese has been
melted. Sauteed fresh
mushrooms 're added before
sprinkling with _bread_..cxunibs
and baking.
For an unusual flavor
combination try the
"Oven -Fried— T'Chieken ' with
Cheese Sauce." Chicken legs or
breasts are coated then browned
in oil on tap of stove before
placing then' in a,shallow baking
pan. During baking, the chicken
pieces are' basted with butter and
milk 'and becom'e--'crispy. At
serving time' they are
accompanied by a 'smooth
cheese sauce containing chopped
parsley.
CHICKEN AND, CHEESE
CASSEROLE
% cup chopped onion
2 tablespoons.butter
4.10 -ounce can condensed cream
of celery soup -
'/2 cup chicken bouillon
• 'A teaspoon dry mustard
1/8 teaspoon pepper
1 cup (4 ounces) grated cheddar
cheese
2 cups broad noodles (4 ounces
uncooked)
2 cups diced cooked chicken
+r 2 cups frozen peas -
2 tablespoons chopped pimiento
1/4 cup buttered bread crumbs
Saute onion in butter until
transparent (about 5 minutes).
Add soup, bouillon _and
seasonings; bring to boil, stirring
until smooth. Add cheese and
s 11 rheited� . otrrbjme----S
noodles with sauce. Add
chicken, peas and pimiento.
Turn into greased baking dish
and sprinkle with buttered
crumbs. Bake at 350E degrees F.
until brown (about 30 minutes).
6 servings.
To freeze casserole for later
:use, -'Omit topping and do not
bike. Chill quickly and freeze
'until solid; urttnold, wrap in
aluminum foil and return tb
freezer. To serve replace in
greased dish, cover and bhke at
350 degrees F. 1 to 2 hours,
. depending do depth and type of
' casserole. Uncover and- -add
topping dtt:ring.' last 10 minutes
of cooking. Of freezer-t0=oven
dish is used, the food may be
left in it during storage.) Storage
time, 3 months. •
CHICKEN AND -"MUSHROOM
• SCALLOP
3 tablespoo butter
3 tablespoons flour
34 .teaspoon salt
1/8 teaspoon pepper .

1 cup Chicken bouillon -
'/2- cup light. cream
3/4 cup grated cheddar cheese
$ 2 cups diced cooked chicken
2 cups, sliced mushrooms (about
1/2 pound)

PEACHY CURRIED CHICKEN
1 broiler -fryer (about 2'/2 lbs.)
cut up
Water
1 tsp. salt
5 whole black peppers
2 bray leaves -
1 medium onion, quartered
2 tbsp. flour
2 tsp. curry powder = .
'/a cup lemon juice
salt and pepper
1 small can Ontario freestone
peaches, drained
parsley -
Cover chicken with water.
shallow baking pan. Spoon '
butter, Land milk over chicken
and bake at 350: degrees F. until
tender (45 to 00 minutes),
turning once or twice to crisp
evenly.
CHEESE SAUCE'
3 tablespoons butter
• 3 tablespoons'flour
'/z, teaspoon salt
1/8 teaspoon pepper
•- . L/&teaspoon .PapAika •
1/2 teaspoon dry mustard
2/3,cup skintmilk powder
2 cups water
1 cup (4 ounces) grated cheddar
cheese
2 tablespoons chopped parsley
Melt butter, blend in flour,
seasonings and skim milk
powder. Graduallyadd water
mixing' thoroughly to blend all
ingredients. Stir and cook until
smooth and thick. Add cheese
and parsley and stir until cheese
melts. 6 servings,
2 teaspoons lemon juice
2 tablespoon.: buttered bread
crumbs
Melt 3 tablespoons butter,
blend in flour and seasonings.'
Gradually _ add combined
bouillon and cream. Stir and
cook . until smooth and thick,
Add cheese and stir until melted'.
Combine sauce with' chicken.
Saute mushrooms in remaining 2
tablespoons butter and sprinkle
with' ' lemon juice. Add
mushrooms to chicken mixture.
Turn into greased baking dish,
sprinkle with bread crumbs and
bake at 350 degrees F. until.

minutes). 6 servings. •
OVEN -FRIED CHICKEN'
WITH CHEESE SAUCE
1/4 cup flour
1/2 teaspoon skit
1/8 teaspoon pepper
1/2 teaspoon paprika
3 whole chicken breasts OR 6
whole legs
Oil
3 tablespoons melted butter
3 tablespoons milk
Mix first four ingredients,
coat chicken and brown inr'o�il
about 15 minutes. Arrange skin

Add next four ingredients; bring
to ttoil and simmer 30 minutes.
Reniove chicken from broth;
keep warm. Reduce broth to 11/2
cups, remove ,excess fat. In
saucepan, mix flour, curry
powder and broth. Bring to boil,
stirring. ' Simmer 5 minutes and
add lemon' juice. Season with
salt and peppeb, Pour over
chicken and garnish with
peaches and parsley. Serves four.
SURPRISE CHOCOLATE
PARFAIT
Place 1/2 pint' chilled whipping`:
creamin large bowl;.add 1/3 cup
sifted p icing sugar, 3 tbsp. sieved '
cocoa and a few grains salt. Beat
with rotary beater until cream
mixture starts to thicken; add 3/4
tsp. vanilla.. Continue beating
until mixture stands in firm
peaks then pile into serving dish
or four individual .dishes: Freeze
until firm about 3 hours.
Garnish and serve immediately.
Yield: 4 servings.
POACH EDSAIMON STEAKS
UVITH LEMON -CREAM
SAUCE•. -
2 ' , 12 -oz. packages' of B.C.
Salmon steaks
4 eups water`
1 medium onion, sliced
1 bay leaf
1 teaspoon salt
6 peppercorns
Separate packages of sallnon
into four steaks. In large skillet
bring water, onion, bay leaf, salt
and peppercorns to boil.
Simmer, covered, for 15
minutes. Add Salmon„ steaks.
Bring liquid back to simmering
point and, poach for 9-10
minutes (15 Minutes if., steaks
still partially frozen) or until fish
flakes easily when pierced with a
fork. Remove fish from ;skillet
with wide,. slotted spatula. Drain
on paper towel.' Remove skin.
Serve with Lemon Cream Sauce.
Makes 4 servings.
LEMON CREAM SAUCE
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1 cup milk
f/a cup mayonnaise -
1-'/z tablespoonslemon juice
1/2 teaspoon lemon rind
2 tablespoons chopped parsley
Melt butter: Add 'flour and
salt gradually, and blend well.
Add milk gradually and cook,
stirring .occasionally, until thick.,,
Add mayonnaise, lemon juice,
and rind and reheat. Add
