Fresh crisp head lettuce is attractive in jts simplicity. This salad idea takes but a few monients to
prepare according to the home economists of the Canada Department of Agriculture. After
removing a few outside leaves the firm head of lettuce -is cut 'into wedges or slices. A variety of
dressings are provided and the diners help themselves.

accompany, and will increase the
flavor and taste appeal. If the
salad has many ingredients and a
distinctive flavor the dressing
should be a - plain one.
Conversely, where the salad is
simple the dressing may offer
extra flavor or Color contrast.

their • tested recipe files.
"Cucumber Cream Dressing"
and "Cottage Cheese Dressing"
have mayonnaise (salad dressing
may be substituted) as their

Dressing" features that recently
popularized . addition to the
dairy industry. Each dressing is
-delicately colored "and piquant
_and was especially chosen to top
fresh green lettuce salads.
, CUCUMBER CREAM
DRESSING
1/2 cup mayonnaise
1/2 teaspoon sugar
1/4 teaspoon salt.
Few grains pepper
1 to 2 tablespoons vinegar
1/4 'cup finely -chopped peeled
cucumber
1/2 cup whipping cream
Combine all ingredients
, except whipping cream. Just
before serving, whip the cream
and fold into cucumber mixture.
Makes about 13/4 cups.

COTTAGE ,ESSING
•
1/4 cup mayonnaise
, 1/4 cup 'chili siuce
•• I cup cottagb cheese
2 tablespoons chopped
pickle
1/2 teaspoon salt
1/8 teaspoon pepper
Combine mayonnaise and
chili sauce: Add remaining
sweet
ingredients and chill. 'Store
refrigerator. Makes about 1
cups.
YOGURT DRESSING
1 sup yogurt
2 teaspoons lemon juice,
1/2' teaspoon, salt
Dash pepper
1 teaspoon sugar--

Combine all ingredients and
chill. Store in refrigerator. Makes'

in NEW POTATO SALAD
1/2 .
'/2 teaspoon sugar
•3A teaspoon salt
Dash pepper .
Few drops tabasco sauce
1/3 cup chopped green,onion •
,Combine all ingredients and
chill thoroughly. Makes about 3/4
cup Tiressirig.
Kneel or sit low in a
canoe. H upset, HANG
ON to.the canoe until
help arrives.
•1/2 lb. bacon
2 tbsp. flour
2 kbsp. sugar
1 tsp. dry mustard
2/3 cup vinegar
2/3 cup water
1 tsp. salt •
dash pepper
4 large new potatoes' , pared,
cooked and sliced
4 eggs, .hard -cooked
1,2 cup choOped Celery •
1/3 cup chopped green. onions
and tops
Heat oven to 350 degrees F.
Fry 1 -inch, bacon pieces. until
crisp; drain- off fat; set bacqn
aside. Combine 1/3 cup bacon
fat, flour, sugar, and mustard
in medium saucepan; stir u
smooth. Add vinegar an
water. Cook over medium
heat, stirring constantly, until
thickened; remove from heat.
Stir in salt -and pepper.
Arrange half the hot potatoes.
and sliced' eggs in shallow
baking dish. Sprinkleowith half
the celery, green onions,. and
bacon. Pour over half the
dreSsing. . with
remaining ingredients. Heat 25
minutes in oven, or until
heated through.

MEXICAN SUMMER SALAD
I can (about 1 pound) red
kidney beans
2 cups diced, peeled cucumber
11/2 cups diced tomatoes
1/2 cup diced green pepper
, 1/2 cup chopped green onion
• 1/2 cup chopped celery
salt and, pepper
1 cup mayonnaise
lettuce
- Drain kidney beans ana mix'
with cucumbers, tomatoes,
pepper, onions, celery, salt and
pepper to taste. Add
.mayonnaise and mix well.
Refrigerate and serve chilled.
At seeving time line bowl with
lettuce leaves and fill 'with
salad. Makes 8 servings.

Minced beef for hamburgers

many -,years. This popular meat '
also combines Well with some
canned foods„ to make easy
hearty dinners.
It is best to transport Minced
meat in a cooler whileAt is in a
frozen state. Remember that a
two -pound package twill stay
frozell longer than two
one -pound. ones. How long it
stays that way will depend upon
the method of storage. It should
be cooked when it has become
partially or ,completely thawed.
If - it cannot be' eaten
immediately, cook it then uselt
the following .day.. If there's
more in ,the,. pacitage• than the
recipe requires, a hamburger
lunch is always enjoyed.
With campers in mind, the

"Campers' Spaghetti" combines
cans of spaghetti and tomato

Carne" brings together canned
„ kidney beans and tomato.soup
to blend tantalizingly with the
cooked minced beef. Each of
'these recipes requires -one pan
and simmering for 15 to 20
minutes. The mouth-watering
.omasr will drift through the
pine branches or along the beach
and bring the •family running.to -
the outdoor dining room. •
Although,each recipe -makes'
servings,' it .may satisfy -no--more
than 4 campers with hearty.,

3 raw potatoes (sliced)
I stalk celery, chopped
salt to taste
Grease casserolp and .arrarige in layers potatoes, ohions,
celery, kidney beans and beer, which has been broken
into pieces. Repeat layers again, seasoning throughout.
Pour soup- over alt. Cover tightly and bake for two honrs,
at 3'50 degrees. Serves 6. •
