The strawberry season
desserts June are luscious
Strawberry ripe, strawberry two, • three because you just
ripe. That used to be the combine fresh strawberries,
summertime call of. the street pre-cooked rice pudding from
vendors, and the signal that the tin and softly -set strawberry

"chocolate krinkles" in muffin
tin in freezer until ready to
serve. (Note: These "krinkle
cups" will keep in freezer for
days.) •At ' serving time, spoon
chilled vanilla pudding into the
Krinkle Cups and top each one
with a fresh strawberry. Serve
immediately. Makes 8.

PARFAITS

strawberry -flavoured jelly
powder
1 tin (151/2 oz.) "ready -to -serve"
rice pudding
1 tin (6 oz.) pure thick cream
• Fresh sliced strawberries
Prepare jelly powder
accordingto package
instructions and pour. into six
parfait glasses. Let jelly partially
set;. then add 1/3 cup
"ready -to -serve" rice pudding to
each parfait glass and swirl it
through ,the jelly. Place parfaits
in refrigerator and- let set until
firm. Top with a dollup of pure
thick cream or your favourite
topping and a few sliced
strawlterries. Serves 6.

ease summer cooking chores, the
Ontario ,Food' Council, Ontario
Department of Agriculture and
Food, has just the answer-. The
Asparagus -Tuna Filler is a
tempting dish, guaranteed to be
easy on the cook while it
satisfies hearty appetites.
Asparagus freezes well, and
because of its short season,
farsighted homemakers will put
away quantities while it is
plentiful. To freeze asparagus,
simply prepare fresh stalks as for
cooking and blanch for 3 to 4
minutes, depending . on length.
Immerse immediately in icy cold
water, drain, package, and
freeze.
ASPARAGUS -TUNA FILLER
1%4 cup butter
2 cups uncooked asparagus, cut
in 1 -inch pieces
1 small onion, sliced
2 7 -oz. cans tuna
1.kiLtspzeayenziepepper
Vets); Vorcestershire sauce
11/2 cups shredded Cheddar
cheese
' 1 tbsp., flour •
1/2 pint sour cream
potato chips
Cook asparagus and onion in
butter until tender but .still
'slightly crisp (about 20
minutes). Drain, flake, and add
tuna, along with cayenne,
Worcestershire and cheese. Cook
over low heat,' stirring'
occasionally, until' mixture
reaches boiling point. Gradually
add sour cream to .flour, stirring
in smoothly. Stir into tuna
mixture, and stir gently while
heating to boil. 'l Fop with crispy
potato chips. Refrigerate until'
needed. To reheat for serving,
place in 350 degree F. oven for
20 to 25 minutes. Serves 6.
Don't wash ice -cube trays in
hot water—most have a special
finish that make , ice _easy . to
remove. Hot water damages the
finish.
Frozen foods can be thawed
faster with the help of an
ordinary electric fan. A four
pound -roast for 'example, can be
.thawed in a.Jittle ..more than
.three -_hours -.using --this --method.

CREAM PUFFS•AND ECLAIRS
1/2 cup butter or margarine
1 cup boilii!ig water
V2 tsp. salt
1 cup sifted all-purpose flour -'
4 eggs, beaten
Preheat oven to 400 , degrees
F.
In mediums' saucepan, heat'
butter with boiling water, over
high heat, stirring occasionally,
until butter melts. Then turn
heat row, add salt and flour,
both at once; and stir'vigorously,
until mixture leaves sides of pan
in a smooth compact balL
Immediately remove . from
heat, then quickly add eggs one
at a time, beating with spoon
until smooth after each addition.
After last egg has been added,
beat until mixture has satin -like'
sheen.
Drop mixture by tablespoons,
three inches apart, on greased
cookie'sheet, shaping each into a
mound that is higher in the
centre, For eclairs, shape in
3 -inch rectangle. Bake 50
minutes without peeking in
oven. Cream puffs are light and
golden brown when done.
Remove from sheet, slit puffs"
open and cool on rack. To serve,
fill with whipped cream or.
flavored cream fillings: Top with
confectioner's sugar, k frosting
