w Asparagus, Ontario's first
garden -fresh vegetable., has made
its appearance„ and deserves star
billing on May menus! Straight,
firm stalks of asparagus are most
desirable and need only be
lightly scrubbed;' with the
woody stem snipped or broken
off, before they are cooked in a°
minimum amount' of boiling,
salted - water until tender.
Asparagus is equally delicious
served hot or cold.
- The Ontario Food Council,
.Department of Agriuclture and
Food, also recommends local
hothouse tomatoes as the ideal
accompaniment to asparagus.
ASPARAGUS -TOMATO BAKE
1 lb. uncooked asparagus spears "
2 to 4 tbsp. butter
4 hothouse tomatoes; diced
2 tbsp, finely chopped onion
2 tbsp. finely chopped celery
1 tbsp. fresh breadcrumbs
1. fbsp..Parmesan •._ ..
salt and pepper
1 tbsp. sweet basil
1 tbsp. sugar
Melt butter in bottom of a
rectangular baking dish, Line
bottom with asparagus; sprinkle
with diced tomatoes, onion,
celery, breadcrumbs, and cheese,
Season to taste with salt, pepper,
basil, and sugar. Cover dish and
bake in 375 degrees F oven for
45 minutes, or until tender.
Serves 4.

cheeses, cottage and cream, with
' fruit as a -dessert. ••
COTTAGE CHEESE—This
simplest of .cheeses is made in
the dairies by adding lactic acid
bacteria to, skim milk to produce
a mild-flavi red,Ifwhite':burd. It IS
packed --in% aft 16 -ounce
containers and is available as
"dry""creamed". "

is low in fat; the "creamed" has
+► cream added and the cheese
contains at least 4% butter fat: It
is usually sold plain,,but relishes,
fruit or vegetables may be
added. The cottage cheese
container should -. be tightly
covered, stored in the

cream cheese. !Made from cream 0
or milk to which dream has been
added, this uncured cheese is -a
smooth product which 'spreads
easily at.room temperature.
It 'contains sixty-five per cent
•.milk fat, It may or may not have
a relish added to it. Cream
cheese should be refrigerated
and, -once opened," the wrapper
should be, folded tightly around
the remaining cheese.
Cream cheese is used in the
two' molded desserts, "Minted
Pear Salad" . and "Apple Cheese
Cups". ' The former recipe uses
the cheese to fill canned pear
7 -halves '- before they are covered
with welear jelly. mixture.
In the "Apple Cheese Cups"
recipe,. softened cream cheese is
dissolved` in a jelly before diced
apples, celery and : shredded
carrots .are added. Either of
these two cheese -fruit ` desserts
may •be served in individual
molds as part of a fruit salad
plate.

1 3 -ounce package lime
jelly powder
1'cup boiling water
1/2 cup pineapple juice
1 teaspoon lemon juice
1 cup cottage cheese
4 cup drained ciushed pineapple

24 graham or vanilla wafers
1/4 cup. butter
1/2 pt, whipping cream
1'/2 cups icing sugar
2 eggs
1 tin crushed pineapple
• Crush and press half of wafers into 9" x 9" pan, Cream
sugar and butter. "'Add eggs, one at a time. Spread over
efiil'fii'1 :.'_Foltittraittr-crdshed pineappkotrinthipped
cream. Spread over first layer. Covet • with remaining
crumbs. Chill. Cut into squares to serve.

1/2 cup finely diced celery
. Dissolve jelly powder in
boiling., _water., Add pineapple
juice and lemon, juice. Chill until
beginning to set. .Mash cheese
and fold into jelly mixture. Fold
in •pineapple and celery. Pour
into, individual -molds and chill
until firm 6 individual molds.
MINTED PEAR SALAD
1 19 -ounce can pears
2,3 -ounce packages lime
jelly powder
2 cups boiling water -
1 1/3 cups syrup from
pears
2 tablespoons lemon
juice
1/4 teaspoon peppermint
extract
1 4 -ounce package, cream cheese
• cheese
1/2 teaspoon grated • d
lemon 'rind
3 tablespoons finely
chopped walnuts
Drain .. pears, saving. syrup.
Dissolve jelly powders in boiling
water, Add syrup from pears,
lemon juice and peppermint

Form remaining cheese „ into
small balls, roll in chopped nuts
and reserve for garnish. Pour a
thin layer of felly into mold or
8 -inch square cake pan. Chill
until almost set,. Arrange pears
cut side down in mold. Pour
remaining jelly •over pears and
chill until firm. 6 servings.

1 3 -ounce package apple
jelly -powder
1 cup boiling water
2 tablespoons sugar' '
1/4 teaspoop salt
1 8 -ounce package cream cheese
1 cup apple juice'
2 -tablespoons lemon ^ '
juice
1 cup diced unpeeled

1/4 cup diced celery

Dissolve jelly powder in

salt. Cut cheese in pieces, add

Add apple juice and lemon juice.
