Beef Upside -Down Pie
(tried and proven)
5 tablespoons shortening 1 can condensed tomato soup
'/t cup sliced onions / Ib. ground raw beef
11/2 cups sifted pastry flour 1 tsp. salt
'/4 tsp. white repper • 3/4 cup .milk,or half milk•and water
3 tsp. baking powder 1 tsp. celery salt '
Melt 2 tablespoons shortening in frying pan. Add onion
and cook until tender. Add tomato soup and meat. Bring to
boil, reduce heat and let simmer ,while preparing the
topping. Sift dry ingredients together. Cut in remaining 3
tablespoons shortening until well distributed. Add milk and
stir until blended. Spread this dough over meat t mixture.
Bake at 475 degrees for about 20 minutes. To serve, turn
upsidedown on large platter.

1 package (3 oz.) powdered
topping mix
'/2 cup milk
1 liqui-pak (1 oz.) unsweetened
baking chocolate
Prepare topping mix
according to package
instructions: After topping has
been whipped fold in
unsweetened liquid • baking
chocolate (Nestle's Choco-bake).
Spoon over top of cupcakes and
complete decoration with a
pinch of coconut, chopped nuts,
chocolate chips or perhaps a
eherry.

6 small -boiling onions, peeled ,
2 cups diced carrots'
1 can (10 oz.) mushroom pieces,
drained (optional)
3 medium, potatoes, peeled and
quartered
6 whole black peppers
6 whole cloves
2 bay -leaves
Fry bacon until browried but
not. crisp; drain; cut into 1 -inch
pieces. Cut beef into 1 -inch
pieces, dredge' in' flour; brown in
oil with garlic. Remove garlic;
add water, wine or bouillon, and
salt; bring to boil. •
Turn mixture into 2 -quart
casserole; add remaining
ingredients and bacon. Cover
and bake at 325 degrees for
about 2 hours. Serves 6.
