An inviting ,way to welcome
spring into family meals is with. a
colourful, --gay . menu full of
Ontario: products, says the
Ontario food Council, Ontario
Department of Agriculture and
Food. Canned peaches and fresh
hothouse tomatoes are a
delicious combination with
chicken pieces;. add to this a
cool, molded salad made from
fresh local cucumbers and baked
potatoes and what more could
the family ask for? Only • a
scrumptious apple pie laced with
truly Ontario maple syrup!
Peachy Tomato Chicken
6 chicken pieces
'/2 cup flour
'/2 tsp. salt
peaches
1 tbsp. cornstarch
' 1 tbsp. soy sauce
3 'tbsp, vinegar
2 Ontario hothouse tomatoes,
cut in wedges •
Shake chicken in flour and
spices. Brown .in butter in
frypan. Cover ,and simmer until
tender. Drain excess fat. Add
onion and celery; cook until,
onion is transparent. Drain
peaches. Blend peach syrup,
cornstarch, soy - sauce, and
vinegar. Add' to chicken and
cook until clear and thickened.
Add peaches and tomatoes. Heat,
through. Serves six.

-2 tbsp, corn syrup
1/3 cup evaporated milk
3 tbsp. butter or,nargarine

11/2 cups•drained, canned fruit
Place sugar,: corn syrup and
evaporated .. milk in saucepan.
Cook to 238 degrees F. or soft
ball stage (.`when a small antount
of mixture.' forms a soft ball in
very • cold water); stir
occasionally. Remove from heat;
add butter or margarine' mixing
until melted. Place corn flakes in
a largebowlthen pour hotsyrup
over.. corn flakes. Stir until well
mixed. Pack into well greased
8 -inch ring mould'. Chil . about 1
hour or until firm then unrnould
on serving. dish., Place .canned
fruit (or fresh fruit in season) in
centre on bottom of ring, spread
evenly. Pile chocolate cream on
top of fruit. Serve immediately.
Yield: 4-6servings.

CHOCOLATE CREAM
Chill 1/4 prof.,, of whipping
cream then place in bowl. Add
21/2 tbsp. icing sugar, 11/2 tbsp,
Cocoa and a few grains salt. Beat
until mixture starts to thicken;

To prevent a crust from
forming, on cooked cereal that is•
to be kept overnight, cover while
cooling it. The steam condeils
and prevents a crust.

44.cup soft Shortening
l Gap sugar
1 egg •
s/� euip .sifted cake flour,
3 tbsp. Cocoa
p 1 tsp. baking powder
'/a tsp. baking, soda
1/8 tsp, salt
1/2 cup sour Milk
Canned pear halves
Whipping cream
Canned or maraschino cherries
Cream • shortening in baking.
bowl .until light and fluffy.. , ld
sugar; cream until well;ble ed•.
Add, egg, beat until light' and
fluffy. Sift together cake flour,
Cocda, baking powder, baking .
soda and salt; add alternately to
creamed mixture with sour milk.
Beat after each addition until,
well blended. Bake in 'an 8 -inch
linedand greased layer cake. pan
at 350 degrees F. for 25-30
minutes or until done.
Remove from oven and cool
10 minutes in pan. Remove from
pan and complete cooling on
cake rack. Place on serving dish;
add a small amount of pear
syrup to top of cake: Arrange
pear halves in circle "as
illustrated. Whip cream and pipe
around edge of ' cake and in
centre of pear halves: Garnish
with cherries. Yield: 4-6
servings.

Combine 1/3 cup 'flour, •2 tsp. baking powder, and 1 tsp. salt.
