Maple Syrup- Apple Pudding
Rumor has it sap's running!,,
Once more, it's maple „syrup
time in Ontario. To appreciate
fully' the distinctive flavor of
maple syrup, the Ontario Food
.Council, Ontario Department of
Agriculture arid Food `suggeats"
you Use it where it matters most
-- on ice cream,, pancakes,•
waffles, or a simple pudding.
In combination with
Controlled Atmosphere apples,
maple syrup is wonderful in
biscuit doughs, upside-down
cakes and time-honored baked
apples'. cream. Serves 4.
Maple Syrup Apple Pudding
1 cup biscuit mix
'/z cup chopped walnuts
'/2• cup milk, ,
1 cuparnaple syrup
! cup tb?own sugar
2 tbsp butter.
tsp cinnamon_ .
1 cup chopped apple
Heat maple syrup, , sugar,
butter, cinnamon and apples to
boiling; simmer for about 10
minutes. Combine biscuit mix,
walnuts, and milk tightly with a
fork. Drop by heaping
teaspoonfuls into greased 11/2
quart casserole. Pour maple
syrup mixture over dough. Bake
at 375 degrees F for 30 minutes.
Serve warm with whipped

MARINATED ROUND STEAD,
Marinade
1/0 cup vinegar .. ;
1/2cup chili sauce
1/3 cup:finely chopped onion
'/q teaspoon dry mustard
1 teaspoon. L orselradish
1/8 teaspoon pepper
2 to.3 drops tabasco sauce,
11/2 pounds round steak
2 tablespoons fat .
2 cups sliced onions
2 tablespoons fat
1 tablespoon chopped parsley'
Sprinkle onion and parsley over
steak, 6 servings. '
Combine' ingredients for
marinade. Pour over steak' Let
*stand'several hours Or overnight
in the refrigerator.
Remove.stea,k dfrom marinade,
dry , with paper towel, cut in
serving -size pieces and brown in
2 tablespoons of the fat. Place in
greased baking dish, pour
marinade over steak, cover and
bake at 325 degrees F. until
tender (about 11/2 hours). Baste
occasionally with marinade.
Uncover for last 15' minutes of
cooking. '

Saute , sliced onions in
remaining 2 tablespoons fat until
golden .(about 5 minutes).
BgEF STROGANOFF
2 pounds'biade steak
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon paprika
2 tablespoons fat
1/2 cup. chopped onion •
'/2 cup diced celery
'/2 cup beef bouillon
1 cup sour cream
2 tablespotns flour
Cut steak in serving -size
pieces. Sprinkle steak with salt,
pepper and paprika and brown
hi' fat, Add onion and celery.
Saute until onion is.transparent
(2 to 3 minutes). Add bouillon,
cover and simmer gently until
meat is tender (about 11/2 hours).
Combing sour cream with flour.
Add td pan and stir until
thickened. Serve with buttered
noodles, 6 servings.
HUNGARIAN GOULASH
2 pounds boneless stewing beef
2 tablespoons fat
2 teaspoons salt
1/8 teaspoon pepper
1 teaspoon paprika
1 teaspoon caraway seeds
1 tablespoon Worcestershire
sauce
1 medium sliced onion
3'/2 cups water
'/2 cup sour cream
'/, cup flour
1 cup diced celery
1 cup died carrot
3 tablespoons flour

1 teaspoon salt
'/4 teaspoon pepper
1 teaspoon paprika
1 bay leaf
1 teaspoon oregano

onions and carrots and continue
cooking. until tender (about 80
minutes). Add drained beans jest
before end of cooking.
Arrange meat and vegeblea
on warm serving dish. Combine
flour and'water, add to liquid in
pap and stir until thickened.
1 teaspoon sugar Pour gravy over meat. 6 servings.
Cut ribs .in serving -site pieces, •POT ROAST IN FOIL
removing excess fat. Brown ribs"
In' fat about 10 minutes. Remove 4 pounds cross rib,or blade roast
from pan. Add onion, celery and 2 tablespoons fat '
carrot and saute until onion is • 6 tablespoons (11/2 oz.) onion
transparent (about 5 minutes).
Stir flour • into mixture. Add:
tomatoes and bring to boil,.
stirring:constantly. Add ribs and
remaining ingredients. Cover and
simmer until meat is tender (11/2
to 2 hours). 6 servings.
FLANK STEAK ROLLS
WtTH•VEGETABLES
2 pounds flank steak
';2 pound sausage meat
1 cup soft stale bread crumbs
11,2 teaspoon dry mustard
':1 teaspoon thyme
2 tablespoons tomato catsup
' 2 tablespoons fat
2 cups tomato juice
1 bay leaf
1 teaspoon Worcesrshire sauce
2 teaspoon salt °
1/8 teaspoon pepper
6 small onions
6 small carrots
Cut meat in 1 -inch cubes and:1 10'^ -ounce can cut green beans
brown on all sides in fat. Add 1 tablespoon flour
seasonings, Worcestershire sauce, 2 tablespoons cold water
onion 'and water. Laver -closely Score one side of steak,

6 mediunt potatoes
6 medium carrots
Brown meat on all sides in fat.'
Sprinkle half the soup mix on' a
large piece of aluminum foil,
place roast on top • and sprinkle
with remaining soup mix. Wrap
foil around meat sealing with
double folds. Place in shallow
roasting pan and roast at 325
degrees F. until tender (2'/s to 3
hours). Add potatoes and carrots
about 1 hour before end of
cooking time. Fold foil back to
brown meat and vegetables
during last 20 minutes of
cooking. 6 servings.

Shred 4. ounces of the
imported Holland • cheese (to
make 1• cup). Thinly slice
remaining cheese. Thoroughly
blend the shredded cheese with
melted butter and bread crumbs:
Press onto the bottom and sides
of a well greased nine inch pie
pan. Cover with the thin slices of
imported Holland cheese. Top
--,:and-brown-in-fat.--Add--tomato
juice, bay leaf, Worcestershire
sauce, salt and pepper. Cover
tightly and simmer until alm
