and paprika for a very inviting
potluck dinner.
Parsnip and Pork Potluck
, 1 pound lean. fresh :pork
1 anion;-s1ieed-tn-rings-
21/2 to 3 cups vegetable stock or
—water '
1 tsp salt '
1/8 tsp pepper
3 cups diced parsnips
nbsp flour
paprika
pork in 1 -inch cubes and
brown in pork fat,trimmedfrom
the meat. Add onions for last 4
Minutes. Add "water :and -cook,'
gently until meat` ' is tender,
about 50 minutes... Add salt,
pepper. and parsnips. Cook until
,parsnips . are tender. Blend flour
with / cup cold water andsstir
- into boiling stew mixture. Czok.
until thickened. •
Serve sprinkled with paprika
in heated bowls. Makes 5'to 6
servings. •

Pastry for 9 -inch single crust pie
Combine sugar, flour, salt and
-Glazed Mint Parsnips rhubarb. Mix well: Allow to
stand 30 minutes, stirring
occasionally.
Beat egg yolks, • thoroughly
,mix into rhubarb mixture.
Line pie pan with pastry.
• Turn rhubarb intb .unl?aked pie -
shell. Bake at 450 deg. F for 20
minutes. Reduce- heat to 350
--deg - and-o�tinuebaking-
asii"and scrape parsnips. Cut' until filling at ,center of pie has
in slices. Cook in boiling salted thickened, 30` to 40 minutes.
