It is a "show-off" dessert for holiday entertaining. CHRISTMAS LOG CAKE 1/4 cup sugar 1/2 cup sifted all-purpose flour 1/3 cup cocoa - 3/4 tsp. baking powder tsp. salt , 4 eggs 1, 2 cup sugar 1/2 tsp. vanilla Measure then sift together 1/4 cup sugar, flour, cocoa, baking powder and salt into separate bowl or onto waxed paper; set aside. 13eat eggs in deep bowl about 2 minutes or until lemon colored. Add remaining sugar gradually; continue beating. Beat in vanilla. Fold sifted dry ingredients into egg mixture one • half at a time. Spread evenly in 10 x 15 inch pan which has been lined with waxed paper then greased 'and lightly floured. Bake • in pre -heated 400 deg. F oven 12-13 minutes. 84 Loosen edge of cake; turn out onto tea towel which has been ' sprinkled - with icing sugar. Remove waxed paper then trim off crisp edge of cake. Quickly roll cake up in towel. Cool on rack; unroll. Spread with Butter Cream. Re -roll then spread with • Chocolate Cream Frosting. Draw a fork over frosting to, give a bark effect. Sprinkle lightly with icing sugar to resemble snow. Add sprigs of holly. Yield 4-6 servings. BUTTER CREAM Cream together 1/2 cup butter or margarine and 1/2 cup icing sugar. Add 31/2 cups icing sugar and 1/2 tsp. vanilla; mix to blend. Add 3-4 tbsp. milk- or cream; mix well until soft and smooth. Divide in half. Use white butter cream inside log. To remainder add 11/2 tbsp. cocoa; mix until smooth. Use Chocolate Butter Cream to frost outside of log. A visit to the housewares 'de- partment, or hardware store, for example, might prove, most worthwhile; , , , . • " • • • a . :Smolt '044 delicious CHOCOLATE VELVET Prepare it the day before and save yourself a last minute rush. This dessert is a luscious ending to your party fare. - 1 envelope unflavoured gelatin 3 tbsp. cold water 2/3 cup Sugar Few grains salt 1 cup boiling water 2 tbsp. cocoa 1/4 cup boiling water 2 egg whites 2 tbsp. sugar Place gelatin in heat -proof bowl; add cold water and soak 2-3 minutes. Atht sugar and salt then 1 cup boiling water; stir until dissolved. Combine cocoa with 1/4 cup boiling water until smooth; add to gelatin mixture. Allow to set until slightly thicker than egg whites. Beat egg whites with remaining, sugar until stiff peaks form; fold into gelatin mixture until well blended. Pour into 1 -quart mould then chill until firm. Serve with creaM or chilled custard saude. Yield: 6 servings. The good egg This egg recipe, a favorite of our forefathers, could be just the change your pregent-day menu needs. SHIRRED EGGS Butter a ramekin or a small custard cup. Put in a layer of fine buttered crumbs. freak an egg into a saucer; slip ifito the custard cup. Sprinkle with salt ,and pepper and cover with buttered bread crumbs. During the Christmas season it's still cleverer to plan your own special and loving touches. Women always feel nicer when they do. 'And their families and friends always know. MINCEMEAT MINI PUFFS 1—(8.5 oz.) package cream puff mix 1—(16 oz.) jar mincemeat 21/2 cups milk 1 tablespoon granulated sugar 1 tablespoon vanilla custard powder Prepare cream puff mix according to package, instruction (1 envelope makes 8-9 puffs). Lek cool — slice a piece off top and till puffs with mincemeat. Return filled puffs to warm oven for 10 minutes to heat through. Meanwhile, prepare a custard sauce for topping by heating 21/4 cups of the milk in a saucepan, stirring constantly. Dissolve granulated sugar in the hot milk. Mix custard powder with remaining 1/4 cup cold milk; slowly add to the hot milk Mixture, stirring constantly. Continue heating and stirring for five minutes. Remove hot, filled mini puffs from oven and spoon hot -sauce over them. Serves about 8. * * * MINCEMEAT MACAROONS 3 egg whites, beaten until stiff 1 cup granulated sugar 1 tablespoon cornstarch _ '1 teaspoon salt 2 cups flaked coconut 1 2 teaspoon almond extract 1-16 oz. jar mincemeat Mincemeat minis are Preheat oven to 300 degrees F. Lightly grease two cookie sheets. In top of double boiler, combine stiff egg whites, sugar and cornstarch and cook, stirring constantly, about fifteen minutes. Remove from -heat. Add salt, coconut and almond flavoring. Mix thordughly. Drop by teaspoonfuls onto prepared cookie sheets about 1" apart. Make a hollow in the top of each cookie and fill with 1/2 teaspoon. fun of • mincemeat. Bake twenty minutes until lightly browned. Cool on wire rack. Yield: Two dozen. * * * MINCEMEAT SQUARES Pastry for 9" double crust pie 1-16 oz. jar mincemeat 6 maraschino cherries, quartered Preheat oven to 350 degrees F. Prepare pastry according to your favorite recipe. Roll out three-quarters of the pastry into a 9" square shape and fit into a 9" square pan. • Spread mincemeat evenly over surftee• of the pastry. 'Roll out remaining pastry and cut into six 9" strips. Place strips on top of the mincemeat, all in the same direction. Arrange cherry pieces in four rows of six. Bake for 30-35 minutes. Remove from oven; cool thoroughly and cut into twenty squares. Makes 20.
