Apple Dumplings refreshing change .:after Christmas
Mile will be plenty of fresh
Canadian apples for lunch boxes,
Pies and souks this winter. Not
Only WAS there an above average
crop but there was a record
harvest in the United States as
well. It is also possible that there
will be fewer apples exported
overseas. These combined
factors should keep our apples at
a popular price for Canadian
consumers.
To make these "Apple Dumplings" whole, peeled and cored apples areivrapped in squares of
pastry. The edges are pinched together to keep the juices in and the pastry is pricked so steam can
escape. The home economisrts of the Canada Department of Agriculture suggest these
old-fashioned favorites be served warm with "Apple Butterscotch Sauce" made with apple juice.

TUTTI-FRUTTI
11/2 cups flour ',h cup brown sugar
1 cup shortening
Work together and pat in a 9 -inch square pan. Top
with 1/2 cup walnuts,' cup green and red cherries.and'2
cup raisins. Over this pour 1 can Borden's Condensed
milk. Bake in slow oven (325 deg.•F) for approximately
40 minutes.
PINOCHE FUDGE
1.cup granulated sugar
1 cup brown sugar (packed)
3-tbsp. white corn syrup
'34cup milk
2 tbsp. butter
sprinkle of salt
344 cup broken nut meats (walnut or pecans)
1 tsp. vanilla
Place sugar, syrup and milk in saucepah and stir over
direct heat until mixture is boiling. Continue to -boil
until temperature. of 237 deg. F is reached. Remove
from heat and place in pan of cold water. Add butter
and sprinkle of salt, but•do not stir. Cool to lukewarm.
Add nuts and vanilla and stir until mixture is 'creamy and
stiff.
Pour into,a butter loaf pan and cut into squares.
CHOCOLATE MACAROONS
First Part:
• In large mixing bowl measure out: 3 cups oatmeal, 1
cup coconut, / tbsp. salt. and' cup cocoa. Blend.
Second Part:
In saucepan place 2 cups white sugar. / cupmilk, '/i
cup butter or margarine.
Bring to boiling point. Remove from heat add 1 tsp.
vanilla. Pour over oatmeal mixture. Mix well.
Drop from teaspoon onto wax paper. Let set a few
hours or overnight,
The mixture may be spread in a 9 x 13 pan afl*ed.t,
into small squares. •
Salt to be used when margarine replaces butter.

Although apples are grown in
most provinces, the leading
producers are British Columbia,
Ontario, Quebec, Nova Scotia
and New Brunswick in that
order.
This popular fruit is handled
with care from tree to store to
provide the consumer with an
attractive, • flavorful product.
Packers sort and grade their own
apples.
The top grade apples, labelled
Canada Extra Fancy, are
individually selected and packed
by count into trays, cartons or
boxes. The grade most
commonly available, Canada
Fancy, is found in supermarkets
in polybags of 3, 5, and ° 10
pounds and are often named as
to variety. This grade implies
apples which are mature,
reasonably well formed and
colored, sound, and with a
minimum diameter of 21/4 inches.
There may be considerable
size variation in a bag of apples
and if there are several large ones
the others seem smaller by
comparison.
In some areas the shopper
may find Canada Commercial, or
Canada Cee, grade displayed.
Such apples lack the degree of
coloring demanded for Canada
Fancy and have considerable
damage either in the form of
bruises, breaks in skin4 etc.
When the .purchaser desires an
apple for cooking as well as
eating, the all purpose . apples
such as McIntosh,' Cortland and
Spy are all very good.
Apples should be kept cold to
preserve their freshness and
crispness. In today's houses or
apartments this usually means
refrigerator storage. Unless there
is adequate coldroom storage of
near optimum 32 deg. F, it is a
good idea to buy apples in small
quantities that can be
,adequately stored.
Many fresh apples find their
way into pies, the most popular
way of using them.
APPLE DUMPLINGS
Pastry for 2 -crust pie
6 medium apples, peeled and
cored
2 tablespoons butter
' 2 cup brown sugar
' 2 teaspoon cinnamon
' 2 cup raisins
Prepare pastry. Roll out to a
rectangle 1/8 -inch thick. Cut in
6 squares, large enough to
enclose each apple. Place an
apple in centre of, each square.
Combine butter, sugar,
cinnamon and , raisins. Fill
cavaCties in apples with raisin
mixture. ,Moisten edges of
pastry, draw up the four corners
and pinch edges together to seal.
Prick pastry to let steam escape.
Place in shallow baking pan.

Bake at 425 deg. F until pastry
is browned and apples tender
(25 to 40 minutes, depending on
variety and size of apples). Serve
warm with cream or Apple
Butterscotch Sauce. 6 servings.
APPLE BUTTERSCOTCH
SAUCE
3/4 cclp brown sugar
3 tablespoons cornstarch
1/8 teaspoon salt
2 cups apple juice
'A cup butter
Mix sugar, cornstarch and salt.
Gradually blend in apple juice.
Cook until thickened and clear
(about 10 minutes), stirring
constantly. Add butter and stir
until melted. Serve,warm. Makes
about 2 cups.
