Tomato Baked Beans with
.Sau:teed Wieners
Cabbage Slaw
Sliced Pears
Easy on the dollar, easy on
the cook, bean -based dishes pep
up mealtime with old-fashioned
goodness. For a real
protein -packed ,meal, , the
Q Ontario Food Council, Ontario
Department of Agriculture and
Food, suggests you serve beans
with wieners, luncheon meat,
sausages, or Cheddar cheese. Or
top beans temptingly with
chopped apple, tomato, plump
raisins, or maple syrup.
Plentiful and priced right,
pears are an ideal complement
for this fall meal.

Tomato Baked Beans
71 cups boiling water
21/2 cups dry white beans
1 medium onion, sliced thin
1/3 cup butter
Holiday safety

1 28 -oz can tomatoes and juice
2 cups bean liquid (add water if
necessary)
1 tsp salt
1/8 tsp dry mustard
pinch of ginger
dash of cayenne
1/3 cup molasses
1/3 cup chiltsauce
I Add beans to boiling water.
Bail for 2 minutes. Cover
tightly, remove from heat, 'and
let stand 1 hour. Drain, reserving
Liquid, and turn beans into large
saucepan. Combine 2 cups of
reserved - liquid with all
remaining Ingredients except
molasses and chili sauce, and
.pour over beans. Bring to boil,
reduce heat and simmer for 1
hour. Turn into 2 -quart baking
dish. Combine molasses and 'Chili
sauce. Pour over beans. Covet"
beans and bake at 325 deg. for 1
hour. Remove cover and bake 1
hour longer or until beans are
tender. Serves six to eight.

TERRIFIC TOPPING
Combine the convenience of a
baker's one -crust pie with your
own personal garnish for a
holiday special dessert. Cover
top of pie with 2 cups miniature
marshmallows. Toast under
broiler until marshmallows are
brown. Chill. Cut a- can (8
ounces) jellied cranberry sauce
into half inch slices. With a
star-shaped cutter make 7
cranberry stars. Garnish each
wedge of pie with a cranberry
star. Makes 7 servings.

DELUXE FRUITED
ANGEL CAKE
1 package (8 ounces) cream
cheese
'/a cup sugar •
1/3 cup milk
1/4 teaspoon almond extract
1/2 cup diced candied fruits
▪ 1,i2 cup toasted slivered .almonds
1/2 ounce .semi -sweet chocolate,
shaved
1 round angel food cake
3 tablespoons rum
SEVEN -MINUTE
• ICING

1 egg white'
3/4 cup granulated sugar
'/a cup ,water
11/2 teaspoons light corn syrup
few grains salt
1 teaspoon almond extract
3 drops red food coloring
Whip cream cheese, sugar,
milk and . almond extract
together until smooth; stir in
candied fruits, almonds and
shaved chocolate. Chill. Slice
cake into 3 equal -sized layers. -
Sprinkle 1 tablespoon rum over
each layer. Reassemble cake,
spreading cheese mixture
between layers.
Icing: Combine egg white,
sugar, water, corn syrup and salt
in top of a double boiler. With
' electric mixer at high speed, beat
about 1 minute to blend; then
place over rapidly boiling water,
beat till mixture forms peaks
when beater is raised.' (It may
take longer. than 7 minutes.)
Remove from heat ' and add
6 almond extract and coloring.
Continue beatinguntil thick
enough to, spread over top and
sides of cake. Makes 10-12
servings. •

Cut cake into 2 inch squares.
Place on a greased broiler pan or
cookie sheet and toast under
broiler, turning to brown all
sides. Cream butter, add sugar
and whip until blended. Add
cream and continue whipping
until light and fluffy. Spread
frosting over top and sides of
cake. Sprinkle crushed candy
over soft frosting. Makes 20

PINEAPPLE -EGGNOG
CAKE
1 loaf pound cake
1 cup dairy eggnog
1/2 cup pineapple juice
1 cup heavy cream
'/a cup sifted confectioners' sugar
1/2 teaspoon vanilla extract
Slice the thin crust off top of
cake. Combine eggnog and
pineapple juice. Gradually spoon -
or pour eggnog mixture evenly
over cake until all of it soaks
into cake. Refrigerate for two
hours before serving. Whip,
cream, blend in sugar and.
vanilla. Serve over slices of
chilled cake. Makes 10 servings.

attention to the tree and
lighting, the Canada Safety
Council . says in�a holiday
message.
To keep the tree • from
becoming dangerously dry, it
should be stood in a pail of
water. The tree should be
located away from fireplaces and
heaters,,.and be so situated thatit
does not block exits needed in
an emergency.

checked carefully for' cracks and
breaks, because they tend to

friend for Christmas? is a
common inquiry at the' CNIB in
London during this time of the
year. When selecting a gift for
anyone, most of us try to match
the purse of the giver with the
taste of the receiver. Certainly it
is desirable to pick a present that
will be enjoyed and useful, but
CNIB feels that Christmas is not
the time to emphasize a
handicap.
Although there are many
appliances, such as playing cards
and watches, that have been
adapted for people without
sight, it is best to choose a gift,
•using common sense, that does
not require sight to use or enjoy
it. Pen and pencil sets are not
too appropriate, but perfume
and after -shave lotion are.
