Menu of the week for easy entertaining serve buffet style
BEEF#VEGETABLE STEW
WITH PARSLIED DUMPLINGS
CABBAGE SLAW
APPLE,G.US.TARD. PIE
An imaginative change from
traditional apple pie is the
apple -custard pie featured this
week by ` the Ontario Food
Councn, Ontario Department of
Agriculture and Food.
While: _they are in good. supply_}
freeze apples for use later In
favorite recipes. Full -flavored,
crisp, firin apples freeze best. To
prevent discoloration, slice the
apples into a weak brine
consisting of 1 tsp. salt to 1
quart of water.
APPLE -CUSTARD PIE
1 unbaked 9 -inch pie shell
11/+ cups milk
1/4 cup granulated sugar
% tsp. mace
1/a tsp. salt
4 tsp. all-purpose flour
3 eggs.
about 3-medium:apples
2 tbsp. apricot jam
1 tsp.. water
Make up pie shell from
packaged mix or favorite recipe.
In small bowl, beat milk well
with sugar, mace, salt, flour and
eggs. Set oven at 375 deg. F.
Core, pare, then slice apples into
rings about 1/8 -inch thick.
Arrange appleiings, in layers, in
the pie shell. Pour on custard
mixture; then, with pastry
brush, brush edge of shell with
some of custard mixture. Brush
top layer of apple rings with
apricot jam mixed with water.
Bake pie 45 to 50 minutes or
until custard is set, apples are
fork -tender, and crust is golden
brown. Cool on rack about 11/2
hours.
Packaged mixes can make
cooking very easy "-hut very
dull. Add a touch of
individuality by crumbling
bacon into a plain pancake mix
to make it a homemade specialty
and serving it with maple butter.
BACON PANCAKES
1 cup mak
1 egg
1 tbsp oil
6-7 slices bacon, cooked and
crumbled
1 cup pancake mix
Place milk, egg, oil and bacon
in a skaker or glass jar. Add
pancake mix, shake vigorously
10 to 15 times, or until batter is
fairly smooth. Pour batter onto
a hot greased griddle. Bake to a
golden brown, turning only
once. Yield: 8 medium
pancakes. Serve with maple
butter.
MAPLE BUTTER
Cream 1/2 cup butter until`
light and whip in 1/4 cup maple
syrup. Blend well.
Buffets make entertaining
easy, if you- plan- carefully
beforehand. Note these tricks of
the trade 'from home economists

University of Guelph.
Arrange the buffet table for
easy traffic and 0 for' the
.convenience of the guests. Have
a definite traffic pattern and
place foods in the order that
guests should approach first.
Place plates at one.. -.end,
napkins and silverware at the
other; group hot or cold dishes,
condiments, bread or rolls.
Dessert and beverages may be at
one end of the table or, more,
graciously, served later by the
hostess.
The main dish or a salad may
be served at the table by the
host or hostess.
Avoid lineups: escort only
three or four guests to the table
at a time.
Arrange the serving dishes
and spoons to avoid crowding,
so that the guests can easily help
themselves. Place flatware in
rows, never piled one on top of
another.
Be sure the food is
manageable:, have a. casserole
that requires only a fork for
eating, rather than steak, for

economists of the Canada Department of Agriculture suggest
the cabbage head be hollowed out, pilled with coleslaw and
garnished with green pepper and carrot strips. It is delicious
served with a sour cream dressing.
