Christmastime baking would not be complete without those cut-out and decorated rolled cookies.
They offer an exciting opportunity for the children to share in the food preparation for the
approaching holiday season. So bring out the cobkies cutters (stars,' bells, trees) and even the
doughnut cutter to make the wreaths. Bake the cookies ahead and pass out a few samples. Pack
the remainder in layers with wax paper -and hide in the freezer until Christams. According to the
home economists of the Canada Department of Agriculture they wilt keep beautifully for -several
months.
Christmas recipe exchange
It may not look very Christmasv Outside but believe it
or not, -we are just seven weeks away from the festive
season. And whether we' like it or not, it is time to begin
planning for. that Christmas ° dinner and those
pre -Christmas and post -Christmas parties.
We do have some Christmas recipes oh file here at the
Signal -Star which you might enjoy using 'this year. in
fact, there are some included 011 this week's women's
page and we will certainly be sharing more with you.
We're hoping, though, to make this space something
special. In this particular corner, we'd., like to have
recipes from YOU - tried and proven Christmas recipes
from your latc:hens.

we'd like to'have you sign' your recipe. Just a little note
saving, "Please omit my name" will -be sufficient. If you a

Christmas cakes, puddings, cookies, desserts; salads,
squares, punches, main course menus. You name it, we'll

� Christmas cookies for gifts
Hospitality is a very lafge part
of Christmas and one of the
friendliest gestures one can,m.ake
is to share the good things from
the kitchen with all who come
into the house. The giving of
food as gifts to shut-ins or busy
friends is also very much
appreciated at this time of year.
Cookies; both plain and
decorated, are easy to package
and are ' very attractive in
decorated boxes, bowls and
other containers. When sending
cookies a long distance, wrap
them individually in aluminum
foil or waxed paper. This will
keep them fresher longer and
will also keep them from
breaking.
The home economists with
the Canada Department of
Agriculture bring you• several
tasty and pretty cookie recipes
that you might like to try and
use as gifts.
,ORANGE BUTTER BALLS .,
'/z cup butter
'/a cup sugar
1 egg yolk
1 tablespoon grated orange rind
2 teaspoons orange juice
1 teaspoon lemon juice
1 cup sifted all-purpose flour
'/a teaspoon salt
1 egg white
1/2 cup chopped almonds
Candied cherries to decorate
Cream butter and sugar. Seat
in egg yolk. Add orange raid and
juice and lemon juice. Sift flour
and salt. Stir into-- creamed
mixture. Chill at least 2 hours to
firm. Pinch off small pieces of
chilled dough and roll into balls.
Dip in slightly beaten egg white,
then in chopped almonds. Place
on syeased cookie Sheets, and
decovate with sm_all pieces or
candied cherries. Sake at 325
deg. F until lightly browned,
about 25 minutes. Makes about
3 dozen cookies.
CHRISTMAS MERINGUES
2 egg whites
_1 teaspoon salt
' ., cup sugar
' : teaspoon vanilla
1 cup chopped dates or candied
cherries
1 cup chopped nuts
Beat egg whites and salt until
stiff, but not dry. Gradually beat
in sugar un it stiff peaks form.
Add vanilla. Fold in fruit and
nuts. Drop by teaspoons on very
lightly greased cookie sheets and
bake at 250 deg. F until crisp,
25 to 30 minutes. Turn off heat
and leave meringues in oven
until cool. Makes about 4 dozen.
ALMOND SHORTBREAD
COOKIES
1 cup butter •
' 2 cup sugar -
1 egg yolk I
1 tablespoon gr itdd lemon rind
/ cup finely chopped almonds
2 cups sifted all-purpose flour
1/2 teaspoon .salt
1 teaspoon cinnamon
Cream butter and gradually
beat in sugar. Beat in egg yolk
and lemon ---rind. Auld almonds.
Sift remaining ingredients and
gradually stir into creamed
mixture. Turn dough out on
board and knead until smooth, 2
to 3 minutes. Divide in two
halves and chill about 30
minutes, for easier rolling. Roll
out / the dough at one time, on
lightly floured board, to. '/a inch
thick. Cut in fancy shapes with
cookies cutters. Bake, on greased
sheets at 350 deg. F, until very
lightly browned, 10 to 12
minutes. Makes about 4 dozen
cookies (2 inches in diameter).
Decorate cookies in one of
the following ways:
' — Sprinkle with colored sugar
or cake " mettes" before
baking. .
— Cut cookies in 2 -inch
rounds. Cut a hole in centre for
half the rounds. Sandwich
together with jam or jelly, after
baking.
— Spread baked cookies with
thin icing and trim with pieces
of glazed fruit or colored sugar.
Cookies may be baked ahead
and frozen.
