salads
To most people a salad means
lettuce. Indeed,.lettuce was one
of the first vegetables to be
grown on our continent, .being
brought here by the early French
and Spanish settlers.„Today
there is three timesmuch
lettuce consumed in Canada as
there was twenty years ago. This
has been attributed to the
popularity of salads.
Salad ingredients can be
prepared ahead 8f time whether
they are to be eaten at the -
dining room table, on the patio
or taken on a picnic. Several
types of lettuce and other leafy
greens will lend color and
texture variations to a tessed
salad. Select the greens and wash
them thoroughly to remove all
soil • or possible spray residue.
Drain well, ,break greens , into
bite -sized pieces, then place
them in . a plastic bag. Other
ingredients such, as celery,
cucumber, radishes, green onions
etc. can be washed, prepared and
put in plastic bags. If they are to
be transported beyond your own
back yard they may be packed
in the picnic hamper if there is
,no room , in the cooler. Tossed
salads are better combined at the
t'd'estination, so don't forget the
salad bowl and servers. Each
person can add the dressing he

Glamour for
potato salad -
Potato -salad. time is nearly
with us again. Hard -cooked eggs
and a few crunchy, cotorful-
vegetables, like carrots or celery
and mayonnaise added to, the
diced cooked potatoes will make
a tasty potato' salad that's just
right for a warm -day lunch or
dinner. Make the salad at least
one hour before serving to'allow•
the flavors to blend, say home
economists at Macdonald
Institute, University of Guelph.
CRUNCHY POTATO SALAD
3 cups cooked diced potatoes
3 hard -cooked eggs
1/3 cup chopped celery
1 small onion, chopped
cup'grated raw carrot
1 tsp celery seed M
'/2 cup mayonnaise as required
salt, pepper to taste
Combine all ingredients and
toss lightly. Allow to stand one
hour ` in refrigerator. Serve on
crisp greens. This recipe makes 8
to 10 servings. A teaspoon of
prepared mustard added to the
mayonnnaise will add color and
flavor to- the salad.

SALADS 1N,FRENCH LOAF "BOATS"
"Corn Salad" i}sing" cooked kernel corn and the popular "Tossed
Salad" make ars attractive pair when served in French loaf
"boats." The ingredients have all been prepared earlier, packed
into. covered containers or plastic bags and stored in the
refrigerator. The home economists of the Canada Department of
Agriculture advocate placing the salads in the hollowed -out loaf
at the picnic site. Each person can slice through salad and loaf
and select meat from the packages carried in the cooler.

a loaf of French bread. The loaf
is sliced in half lengthwise and
most of the soft crumbs
removed. Both of these have
been tried and enjoyed. Take
along some extra lettuce leaves
to line the bread "boats." The
picnickers can slice off their
salad portion bread and. all!.

be expected to remain at, high
levels.
PORK — Prices may rise
somewhat.

expected to 'advance seasonally.
POULTRY MEAT — Broiler
chickens will be in plentiful
supply at relatively low prices.
Turkeys, especially broilers, will

FRUIT — Strawberries,
raspberries, loganberries,
gooseberries, blueberries,
peaches 'and plums will appear
tossed green salad on the other
half. The Corn Salad combining
cooked kernel corn with raw
vegetables travels well. The salad
dressing is added at serving time.
Cold meats will complete the
salad plate.
CORN SALAD
3 cups cooked kernel corn
2 cup sliced green onions
' 2 cup diced green pepper
'2 cup chopped radishes
'.a cup sweet pickle relish
1 teaspoon salt
',4 teaspoon pepper
1/3 cup salad dressing
Mix vegetables and, pickle
relish. Toss lightly and chill. Just
before serving, sprinkle with salt
and pepper, add salad dressing
and toss lightly. 6 to 8 servings.

Rising prices of beef *are
causing more than passing
concern across the land. Just
why they are rising has yet to be
stated with any degree of clarity.
(Certainly the argument that it's
the barbecue season is not a
.valid one.) However, while the
arguments and complaints go on,
the consumer can get around the
high price • road -block inAa
number of ways.'
There are substitutes for beef
from a healthy diet point of
view, but the fact of life that
cheaper Cuts of beef can be
utilized is more important.
While Canada's Food Guide
says there should be one serving
of meat per day, the equivalent -
food values are available in dried
peas and beans in such things as'
_ chili con carne, beans with pork
and split pea soup. Then there
are fish, 'eggs and cheese for
meatless dinner ideas, but they
all need a little cookbook
research on the part of the
consumer to make sure they are
prepared in novel and appetizing
ways.,
There are several so-called
"variety" meats that are high in
food value and comparatively
low in price. They include heart,
kidney, liver and tongue. If the
family brought up in a steak and
roast atmosphere doesn't like
these names, think yup some new
ones.
•
Expensive' stewing beef can
be replaced by chuck which you
cut up yourself. Lower priced
cuts, if, cooked slowly in a
covered pot, will be equally,
nutritious and tasty as a "top"
out.
Shoulder,. round bone •and
blade roasts are usually lower in
price.
One nutritionist points out
that tom get the most. :for your
money you 'should learn to use
everything you buy, such as
using the bone from a rib roast
for soup, making a blade roast
into a pot roast with tomatoes.
A .money -saving. technique at
any time is to'bring out the meat
grinder and grind up chuck to
make meat patties and beat the
hamburger c ist.
A leading meat packer who is
just as worried about the high
prices as the rest of us, pointed
out to CAC that pork can be
cooked in dozens of attractive
ways at much lower prices than
sirloin steaks. -
So it's a matter 'of "doing
your homework" if you want to
beat the meat (prices). , Many
newspapers carry realises , for
low-cost dishels — clip tIiem and
start a file.
Then there are some
publications available that can
help. For $1 at Queen's Printer
bookshops, or by mail from
Queen's Printer, Ottawa, you

how -too cook." Ask for

It seemed that summer would never come but now it's here and
most of us are probably planning to spend at least part of it away
from home. If there's a vacation corning upcon your schedule, why
not let the telephone take some of the hurry and worry out of both
planning and vacationing. Before you leave, your telephone can "run
errands" to the newspaper, bakery or dairy to step, deliveries.
Newspapers and milk bottles stacked up on the porch invariably
invite trouble: During your trip — especially if you're going by car —
it's a good idea to call ahead for reservations so you Won't be left
without accommodations during this peak travel season. Friends and
relatives that you plan to visit along the way might als'', appreciate a
call telling them of your time of arrival. The local Yellow Pages in
the different communities you visit will help you find a mechanic, a
new fishing rod,, a good restaurant, a doctor or dentist. The
telephone doesn't take a vacation. It's always there to help you.
Goderich's new telephone directory will be going to press shortly,
so please check your listing. Is your name spelled correctly? And
what about your address and phone number? Have you thought
about additional listings? Other merrrbers of : your family and
relatives, roomers or boarders would benefit from having their names
listed in the telephone book. If you're a businessman, you can use
extra listings to show other 'firm'names for your business — to
associate with your firm name — or to show after -hour numbers for
you and your key employees. Remember, extra listings, at little cost,
make it easier for people to find—you. For any. changes in your
Iisings, or any additions, call our Business Office without delay.
Here's a question for yore' Gten Campbell fans. Is the Wichita
Lineman about a telephone lineman or a power lineman? Wichita
telephones are not provided by the county; the area is served by the
Southwestern Bell Telephone Company. Telephone linemen do not
go "searchin' in the sun for another overload". Writer -composer Jim
Webb's secretary says Webb is not a technical man and intended to
write about a phone lineman but if power linemen wish to
appropriate it, that's "groovy" with him too. Even Southwestern
Bell has to adn'fit that being lineman for the county fits a lot better
-in verse than being one for the Southwestern Be-e-e-elll.
