Try an easily prepared chicken and vegetable dish for a hearty meal. A whole chicken, . cut up, may be less expensive than individual pieees... For. dessert, dress up Ontario canned pear halves by serving • them atop vanilla ice cream. Top with hot chocolate sauce. Chicken Special 6 chicken half -breasts (or cut-up, chicken) -11/2 tsp salt 1/8.tsp pepper 1/4 tsp paprika 3/4 cup fine, dry bread crumbs 2 egg- slightly beaten .= 1 to 3 tbsp butter of fat or oil V2 cup water 1 can condensed cream of chicken soup 11/2 cups thinly sliced carrots 3/4 cup celery (diced) 2cups potatoes (cut in thin strips) Season chicken pieces with salt, pepper and paprika and roll in bread crumbs.`Dip chicken into eggs, and roll again. Brown slowly in hot fat until golden brown. Add water,. cover and cook over low heat until almost tender (about 30 minutes). Remove chicken, and keep hot. Add soup .to pan,then vegetables, place chicken pieces on top. Cover, simmer gently until chicken and vegetables are tender. Serves six. GINGER FLOAT '1 small jar pureed pears (baby food) 1/4 tsp. powdered ginger 2 cups milk 3 scoops vanilla ice cream chilled ginger ale Combine pears, powdered ginger and milk. Divide mixture evenly among three tall glasses. Add a scoop of ice' cream to each glass and fill with ginger ale. Serves three. Home economists, Macdonald Institute, University of Guelph, suggest chilling the glasses to make this a really frosty treat. - There's ndthing like a long, tall drink to quench thirst. Fill two tall glasses with crushed ice. Pour hot mixture .over the ice. Top with whipped- cream and sprinkle with grated chocolate. Serves two. Thereare variations in shape and coloring but strawberries should be fresh looking, bright, plump and of good color. The container will not be stained unless strawberries are overripe. Reserve 6 to 8 ,whole berries to garnish. ,Slice remainder and sprinkle with sugar. Cut a 16 -inch slice off top of cake and'set _aside. With a sharp pointed knife hellow out central portion of cake to form a "shell", leaving 3/4 -inch cake around all edges. Break portion of cake removed from centre in bite sized pieces. Fold sweetened Strawberries and cake pieces into 3/4 cup of the whipped cream. Fill hollow in cake with strawberry mixture and replace top slice.' Tint remaining whipped cream a delicate pink if desired and spread over cake. Garnish with whole strawberries and chill until ready to serve. 6 servings. STRAWBERRY' • SURPRISE CAKE 1 pint box strawberries 2 to 3 tablespoons sug r 1 angel food cake (8 -intik tllat'aeter) V2 cup sugar • Few grains salt ',14 cup water 2 teaspoons lemon juice Soften cream cheese at room, temperature. Gradually beat in the 3 tablespoons sugar, then the cream, lemon rind, and juice. 1/2 pint whipping cream, whipped Few ' drops red food coloring ,(optional) Spread ,mixture in baked pie shell and chill. ry Crush 1 cup of the berries, -bring to a boil and press through sieve. Mix cornstarch, remaining `i: cup sugar and salt. Gradually add water andsieved juice. Bring to and cook, stirring constantly until thickened and clear. Cool and add lemon juice. Arrange remaining strawberries in chilled pie and coat with glaze. Chill until ready to serve. 6 servings. NOTE: If "desired, a vanilla padding mix may be used in place. of cream cheese mixture.
