Chicken Special

Chicken provides good eating
on an economy note, reminds
the Food Council, Ontario
Department of Agriculture and
Food. Try an easily prepared
chicken and vegetable dish for a
hearty meal. A whole chicken, .
cut up, may be less expensive
than individual pieees...
For. dessert, dress up Ontario
canned pear halves by serving
• them atop vanilla ice cream. Top
with hot chocolate sauce.
Chicken Special
6 chicken half -breasts (or cut-up,
chicken)
-11/2 tsp salt
1/8.tsp pepper
1/4 tsp paprika
3/4 cup fine, dry bread crumbs
2 egg- slightly beaten .=
1 to 3 tbsp butter of fat or oil
V2 cup water
1 can condensed cream of
chicken soup
11/2 cups thinly sliced carrots
3/4 cup celery (diced)
2cups potatoes (cut in thin
strips)
Season chicken pieces with
salt, pepper and paprika and roll
in bread crumbs.`Dip chicken
into eggs, and roll again. Brown
slowly in hot fat until golden
brown. Add water,. cover and
cook over low heat until almost
tender (about 30 minutes).
Remove chicken, and keep hot.
Add soup .to pan,then
vegetables, place chicken pieces
on top. Cover, simmer gently
until chicken and vegetables are
tender. Serves six.

beat the heat..
GINGER FLOAT
'1 small jar pureed pears (baby
food)
1/4 tsp. powdered ginger
2 cups milk
3 scoops vanilla ice cream
chilled ginger ale
Combine pears, powdered
ginger and milk. Divide mixture
evenly among three tall glasses.
Add a scoop of ice' cream to
each glass and fill with ginger
ale. Serves three.
Home economists, Macdonald
Institute, University of Guelph,
suggest chilling the glasses to
make this a really frosty treat. -
There's ndthing like a long,
tall drink to quench thirst. This
shake, suggested by the Food
Department at '.Macdonald
Institute, tTniver ity of Guelph,
use milk, chocolate and honey
to make a nutritious and
delicious combination.
HONEY ICE
2 tbsp. instant chocolate drink
3 tbsp. liquid honey
2 cups milk, scalded
crushed ice ,.
whipped cream
grated chocolate
Blend instant chocolate and
honey. Stir into hot milk. Fill
two tall glasses with crushed ice.
Pour hot mixture .over the ice.
Top with whipped- cream and
sprinkle with grated chocolate.
Serves two.

telephone book which is kept
handy at all times.

Prior to the arrival of the

records of family illnesses and
innoculations. Also, get family

in your new location.
Ask your doctor for copies of
prescriptions for medicines still
being used.
When packing medicines, be
sure to use a separate carton.
Never pack medicines in the
'same carton with food,
household cleaning chemicals,
sprays, detergents, cosmetics or
toiletries. Seal tops of bottles
and lids of boxes with tape,
being- careful. not to adhere it to
labels. Removal' of tape 'may
damage the label or pull off
printed directions for use and
dosage. Medicines 'no longer in
use should be discarded. Drugs
with damaged labels or drugs
that have changed color,should
be discarded.
The Council on Family
Health. in Canada cautions that
such damaged,, outdated or
unused_ medicines must be -
disposed ,of so. they are
unavailable to others, especially
small children. One method is to
flush the contents of the
medicine container down the
drain. Tablets or capsules may ..

before flushing away.

forget their fragrance or flavor.
If some grow nearby you may

recapture that sensation this

Many things have happened
to the original, little strawberry
found nestling among wild
meadow grasses. Today's
cultivated strawberries have to
be more rugged because they
must ship well, retain color and
flavor in the freezing process and
still lave" eye appeal; Canadians
from coast to coast are
welcoming these native grown
berries ,during June and July.
Thereare variations in shape and
coloring but strawberries should
be fresh looking, bright, plump
and of good color. The container
will not be stained unless
strawberries are overripe. The
caps should still be attached.
Invert the box into a bowl Or
tray, sort and refrigerate them.
Wash and bull strawberries.
Reserve 6 to 8 ,whole berries to
garnish. ,Slice remainder and
sprinkle with sugar.
Cut a 16 -inch slice off top of
cake and'set _aside. With a sharp
pointed knife hellow out central
portion of cake to form a
"shell", leaving 3/4 -inch cake
around all edges. Break portion
of cake removed from centre in
bite sized pieces. Fold sweetened

Fill hollow in cake with
strawberry mixture and replace
top slice.'
Tint remaining whipped
cream a delicate pink if desired
and spread over cake. Garnish
with whole strawberries and chill
until ready to serve. 6 servings.
STRAWBERRY CREAM
CHEESE PIE
8 ounces cream cheese
3 tablespoons sugar
I/4• cup cream
lteaspoon grated lemon rind

served as strawberry shortcake.
The home economists of the
Canada Department of.
Agriculture have chosen three
favorites from their tested"
recipes and want,to share them
with you — a cake, a pit and
squares. The "Strawberry
Surprise Cake" uses a pint box
of berries and an angel food cake
but read the recipe to learn the
"surprise"! Both , the
"Strawberry Cream Cheese Pie"
and "Glazed Strawberry.
Squares" use some glazed
berries. To do this, crush part of
a quart box of strawberries,
bring to the boil, sieve, then
thicken the juice. This colorful
glaze is placed on top, of whole
berries on a cream "cheese
mixture in the pie and on a
baked shortbread type base in
the squares. The squares may be
garnished with, whipped cream.
STRAWBERRY'
• SURPRISE CAKE
1 pint box strawberries
2 to 3 tablespoons sug r
1 angel food cake (8 -intik
tllat'aeter)
V2 cup sugar •
Few grains salt
',14 cup water
2 teaspoons lemon juice
Soften cream cheese at room,
temperature. Gradually beat in
the 3 tablespoons sugar, then the
cream, lemon rind, and juice.
1/2 pint whipping cream, whipped
Few ' drops red food coloring
,(optional)
Spread ,mixture in baked pie
shell and chill. ry
Crush 1 cup of the berries,
-bring to a boil and press through
sieve. Mix cornstarch, remaining
`i: cup sugar and salt. Gradually
add water andsieved juice. Bring
to and cook, stirring
constantly until thickened and
clear. Cool and add lemon juice.
Arrange remaining strawberries
in chilled pie and coat with
glaze. Chill until ready to serve.
6 servings. NOTE: If "desired, a
vanilla padding mix may be used
in place. of cream cheese
mixture.
