TO PREPARE AND COOK
FRESH, ASPARAGUS
Break each stalk as far
clown as it will snap 'easily,
Remove scales at base of stalk
where sand may collect. Then
wash asparagus carefully using a
soft brush. Because asparagus
cooks best in an upright
position, stand stalks in about 2
inches -of actively boiling water
in lower part of double boiler.
Ivert top part of double boiler
over lower -hart. Stalks will cook
in 6 to 12 minutes depending on
their thickness. The thickest part
of the stalk will cook in the
water and the tips will cook in
the steam.

ASPARAGUS PROVENCALE
1 pound asparagus
4 tablespoons butter
1 clove garlic, crushed
3/4 teaspoon salt
'a teaspoon pepper
1 green ` pepper,
chopped
for 6 minutes. Add asparagus
tips ° and onions, cover and
continue cooking for 5 minutes.
Add tomatoes and cook --1 to 2
minutes more. Shake or stir
often. to prevent sticking.
ASPARAGUS AND EGG PIE
1 pound asparagus
4 hard -cooked eggs cup sliced
green onions
3 tablespoons butter
3 tablespoons flour
1.2 teaspoon salt
1/8 teaspoon' pepper
i2 pint commercial sour cream
2 tablespoons chopped parsley
1 baked pie -shell (9 -inch)
Cut tips of asparagus to
4 -inch lengths. Cut remaining
portion of stalks into 1 -inch
pieces. Cook in boiling salted
water until just tender, about 10
„minutes. Drain. 9
Cut 2 or 3 slices' ofg for
garnish. Dice remainder. Saute
onion in .melted butter until
transparent about 3 minutes.
Stir in flour and seasonings.
Gradually add sour ;cream and
cook stirring constantly until
smooth and thickened. Add
coarsely parsley, .. eggs and asparagus
»pieces. Heat thoroughly. 'Turn
1 large onion, sliced in. -rings into pie shell. Garnish with
3xths medium' tomatoes, cut in•- asparagus tips and egg slices.. 6

stalks. Cut'stalks in !'2 inch thick WITH ASPARAGUS

frying pan; add asparagus stalks,
garlic, green pepper, salt and

2 pounds aparagus, cooked .
Season chicken with salt,
pepper and ginger. Place skin
side down on greased shallow
pan; dot with butter. Broil, 8
inches "from heating unit, until.
browned (about 15 minutes).
Turn, baste and continue
broiling until chh ken is brown
and cooked through (about' 20„
minutes longer).
Arrange cooked asparagus in
heat -proof dish; place chicken
on top.
Prepare the following, sauce:
2 tablespoons butter, melted
2 tablespoons flour .
1/4 teaspoon salt
1/8 teaspoon paplika-„
1 cup milk °r
2 egg yolks, beaten
4 teaspoons lemon juice
-2 tablespoons butter •
1/4 cup crushed potato •chips
•
Blend flour and seasonings in
melted butter. Gradually add
milk and cook until smooth and
,,thickened (about 5 minutes).
Stir a little hot mixture int&-.
beaten yolks; add to remaining °
sauce and cook 1 ,
Remove from heat. "Beat ' in
lemon juice and remaining
,butter.
Pour sauce over chicken and
sprinkle with potato chips. Broil•
until lightly browned (2 to 3
minutes). 6.servings.
