I noticed over the weekend that the sap is already -running, — actually I thought it was too early. So, the sap pails will be out, but it also makes some people think of i other things that happen with spring. You can't prove any of this by me, but I was told it won't be long before you will be finding those. .mouth-watel.ing "MORELS" crinkled specie of the--tmushroe I- -do know they are delicious, but I • am afraid to pick them when I know so little about ',them. Here's a little story about them. In northern Michigan — at Boyne City — they have an "Annual Mushroom Hunt." Hundreds of people start off searching for Morels, - a grey -to -brown fungi which, for a brief few weeks each spring, nestle half -hidden in the drab litter of ' last season's fallen leaves. Prizes were not the whole motivation of the searchers, as each contestant would dine that night, on what he had gathered -- and a meal of fresh morels, as every gourmet knows, is its own reward. The winner of this particular hunt had found 286 morels in three hours,,, _ while many others had found 'Only a dozen or so. "Just knowing where to look," was the reply, when asked how she had found so many. There were many tell-tale signs — a stretch of burned -over woodland, the lie of a drainage slope, the -shape of a gully, there or the patch ..yonder where the snow had thawed early. ° The winner knew but wasn't telling. The point is, most mushrooms have specific habitat preferences and grow only where their individual needs are met, No one seems to know, how to grow morels" commerially and a fortune awaits the man who can unlock the secret. y The shrivelled and wrinkled looking morel has a most tantalizing aroma. Wash . and cook 'in butt -- add a' pinch of salt and you have a delicious mouth-watering" dish. MMMM! You should KNOW the morel and watch for any that seem — ' DIFFERENT. When in doubt don't! If you have any fear of having picked one of'a deadly species, discard the whole lot, as one of the first rules of mushroom collecting is never to place edible and poisonous specimens together. The mere touch may contaminate. Is there' any foolprogf-way .of... telling edibles from poisonous? No! — and it is ' extremely dangerous to guess. If you are not an expert, limit your _mushroom ___hunting_ to _ - the - shelves in the Supermarket. There are many theories on how to check — but forget them, the only dependable course is to KNOW the species. ,One guide is "Edible and Poisonous Mushrooms . of Canada" by ' "J. Walton Groves, 1962.
