Storing
Vegetables
Many vegetables can be stored
and kept fresh for enjoyment
throughout the winter. Special-
ists with the Horticulture De-
partment, Ontario Agricultural
College, Universiy of Guelph,
suggest ways you can lengthen
the life of your garden produce.
Different vegetables require dif-
ferent storage conditions, and
now is the time to ensure that
these requirements are provided.
Most home basements are
fairly dry and maintain a tem-
perature of 55 to 65 degrees F.
Only a few types of produce
such as pumpkins, squash, and
tomatoes will` store well under
these conditions. The pump'sins,
and squash to be stored shpuld
Abe fully mature and must be
carefully handled to prevent
bruising. Tomatoes in danger
of frost in,the garden will ripen
well in the basement. Spread
them out in .,shallow brays or
on a :table ,and inspect them
frequently. Discard any toma-
toes which rot or dry out.
