Grapes are the oldest fruit
known to man. The Bible mares
many mention of them. Noah is
said, to have been the first to
cultivate the vine. , Centuries
later, explorers sailing by the
shores of New CBrunswick saw
wild ,grapes growing. For- gen,
orations after, Canada was
known in Viking sagas as Vine-
la"nd.
In 1739 Gaston Menon wrote
"A New Work of Cookery" and
made the first mention of grape
sauce idr game and poultry.
By 1867 Canadian vineyards
were flourishing and house.
wives were busily preparing
conserves and jellies. Mrs.
Catharine, Traill, one oi' our
earjiest writers and an ardent
naturalist had a favourite grape
jelly. She took one pound of the
best white sugar to every pint

cooked slowly, stirred often,
until the jelly .stage was finally
reached.
Old-time jams and jellies fol-
lowed° a rule of thumb method
using equal quantities' of fruit
and sugar. Fruit was boiled until
the fruit acid, sugar and' pectin
were in proper balance to form,
a jell. Some fruits, of course,
never would jell, no matter how
long the mixture was boiled.
Today any fruit can be jelled --
even those known as non -jelling
fruits, if commercial pectin, in
either liquid or crystal form, is
added.
Grape Venison Jelly
(Uncooked fruit)
Yield: about 5 medium (8 oz.)
glasses (3 lbs. jelly),
1% cups prepared juice (about
2 lbs. (1% qts.) ripe Con-
cord grapes)
% .cup cider vinegar
4 'teaspoon cinnamon,

4,. cups (1 ib. 12 oz.) sugar

tablespoons water
M, bottle liquid fruit pectin
First, prepare the juice.
Thoroughly crush' about two
pounds fully ripe Concord
gfapes., Heat slightly to extract
juice, more easily,, if desired.
Place crushed fruit in jelly cloth
or bag and Squeeze out juice.
Measure 1% cups into large
bowl or pan.' Stir in vinegar and
spices.
Then make the jelly. Measure
sugar, add to juice mixture, and
mix well,. Mix water and liquid
fruit pectin in small bowl. Stir
into fruit mixture. Continue
stirring about 3 minutes. (There
will be a few remaining sugar
crystals). ` Quickly pour into -
glasses. Cover " at once with
tight lids. When jelly is set,
store°in freezer. If jelly will be
used within 2 or 3 weeks, it may
be stored in the refrigerator.
Foie'' best results, squeeze
crushed grapes through 4 thick-
nesses --of dampened cheese-
cloth..

of .the year last Tuesday morn-
ing with a "family", assembly.

bouring states of Michigan, Neto

attending 28 performances °set
aside for them by the Stratford
Festival Monday.
Six matinees and a Wednes-
day evening presentation a week
will be held during the remain-
ing fourweeks of the Festival.
Saturday night performances
are open to the general public
as well as any tickets which may
remain available for the student
audience presentation. The sea-
son closes Oct'. 8.
Nearly 60,000 students will
see the productions of "Henry
V," "Henry VI," and "Twelfth
Night."
Among the communities rep-
resented are Elliot Lake, Ham-
ilton, Bowmanville, Port Col-
borne, Windsor, Toronto, Mont-
real, Kitchener, London as well
as Detroit; -. - Ch eago; Grand
Rapids, Mich., and dozens more.
These special student audi-
ence performances were in-
augurated by the Stratford
Festival in 1958. 'During that
season six matinees were pre-
sented. Their popularity was
such that 'within two years two
additional performances were
necessary. In 1961 'there was a.
jump to' 12 performances and
the following year two more
were added. By 1964 the student
season was enlarged to three
weeks. This year it again•" has
been increased to provide 28.
presentations in four weeks.
The daily matinees begin at
2 p.m., with early Wednesday
evening performances at 7:30
p.m. Saturday nights the start-
ing time is 8:30 p.m. All times
are Eastern Daylight,

After the sixth day the cycle
starts over again. This system
must be better, because several
other schools in „the district
have previously been using such
a cycle or have initiated its •use
this year. I'•ve heard the ' ex-
pression, "He's so confused he
-doesn't even know what day it
is." How true! Give us time
though and I'm sure we'll pull
through.

school has started its driving
training course once again this
year under the direction of
Murray McGill. Students not
only attend classes to learn
everything from changing lanes
to the cooling system of a car,
but also receive instruction be-
hind the wheel in dual -con-
trolled cars. Really, they're quite
safe . . really.

Football got off to a bang on
Thursday. Another new idea

first year for Conference Junior
Football at G.D,C.I. Fifty boys
were ,out for -the first practice,
reports Mr. Horner who is as-
sisted by Mr. Madge. Junior
football gives the younger boys
a chance to participate• in the
game at an earlier age. It eases
then into senior football with a
basic knowledge of the funda-
mentals of the game,, thereby
minimizing the chance of.jnjury,
Furthermore, junior ' football
promotes the boy's understand-
ing and leads to greater enjoy-
ment of the game .from the
participant and spectator view
point. Some really good boys
have come out to practise and
with luck they may win a game

youngest and the,smallest 'team
to represent the school in the
last six years.
Junior soccer will start next
Monday. Theoteam will be
coached by Mr. Bouchard and
Mr. McGiiil.'
