oliday Puddings
Last week we asked fo r i elp on our Christmas recipe
series. We had a housewife looking for a good plum pud-
ding re4e,letter than what can_ be boug1, t in the stores
or found in a standard cool book.
We've three to offer ,her now, one from Mrs. Hattie
Roach, 53 Waterloo street north; along with a recipe for home
made candy and another for a Christmas fruit punch. The
secone" is from Miss Esther Hume, 10 Britannia Road east.
And the third was originally created by Steve Price's grand-
mother,
Just for luck we're also offering her a carrot pudding from
Mrs. Gene Ellis, 19 Wellington street south.
Now. 'we'll need' some- recipes for- turkey and chicken
dressing for Monday's paper.
Mrs. Roach's
Large .Plum
1! cups Ugric. brown sugar
2 cups suet d •
11; cups rolled soda biscuits
=1 cup dates, peeled and cut up
a little mixed peel
2 cups' large raisins, chopped.
Don't use dark raisin&
They're too strong: Use a
light raisin.
1 egg
1 cup soar milk •with a teaSpooxi
of soda in it
1 teaspoon mixed pastry spice
or your own mixture of cin-
namon, allspice, nutmeg' or
what you will.
2. cups ;$our
Mix, form into a round pan
and steam five to six hours.
Recipe will serve 12 people.
Mrs. Roach says -she wouldn't
make any.:other kind.

Sauce
11/2 cups brown sugar
2 tbsp_ butter'
Brown sugar and butter and,
a little salt. Stir•' until well
melted and blended on the
:,love, but don't take your eyes
off it. It will burn while you
turn around. The secret in the
flavoring is well browned but
not burr};ti, Lift off and stir a
good tablespoon of raw flour
into it. It won't go lumpy. Then
add enough boiling water to
bring to the right thickness,
cook until flour is done and
that's •enough sauce for the
pudding.
Maple Cream Candy
1 cup brown sugar
1 cup white sugar
�.,,. -eup milk. --- _..
'., cup corn syrup
1 tsp. butter
Bring to a boil and Chen time
for three minutes. Add 1 tea-
spoon vanilla and 1/2 cup wal-
nuts or colored. coconut. • Let
stand and cut. Mrs. Roach re-
commends this as 'A" can't fail
recipe. for all those who've
tried home made maple candy
and didn't succeed.
Cranberry Punch
2 dups cranberries
3 cups water
J.. cup sugar
•1 2 tbsp. lemon juice
1't cups gingerale
Cook cranberries in boiling
water for ten minutes, strain,
then boil the juke with sugar
until dissolved. ' Add lemon
juice and chill. Then just be-
fore serving add gingerale.
Serves eight people.

1 lb. raisins seedless
i la. currants, dates, cherries
or„any fruit
1 lb. bread crumbs
b lb. mixed peel
1 tsp. cassia (cinnamon)
dash of ruldnieg.
dash.,. of. salt- -_
1 tsp. soda dissolved in hot water
also add a little cider for mois-
ture
2 cups flour
2 cups brown sugar
pt. milk
fl eggs
Beat eggs, sugar, milk, add
floured fruit, etc. ` stir well.
Shape into three small molds
or one large one and steam
for three hours.

juice of one lemon
any peel desired, optional

Boil for three hours.
Butterscotch Sauce
tbsp. butter
3. tsp. corm, starch
salt
114 cups brown sugar
11/4 cups boiling water
vanilla
Mix well ,and cook.
1 tbsp. brandy optional ,after
sauce has cleared.

1 lb. raisins seeded
1 lb. Sultana raisins
1 ib. suet
4 eggs
1 lb. flour
dash of Salt
add a --few dates, cherries
14 lb. cut up peel . if you like
this too
1 tsp. pastry spice or your own
•mixxt'ure r I,ousehold spices
a little grated nutmeg
11-i cups brown sugar
1 tsp. baking soda -
2 tsp. cream of taa•titrfi,
1 oup milk
a wine glass -of brandy or
table wine.
Divide batter in four cotton
bags. Tie loosely with room to
expand. Then drop in boiling
water, let cook for three hours
or put in steamer for three
hours and just before serving
add a jigger of dark navy rum.

2 dessert spoons. flour
14 cup butter
Sear butter and sugar but
don't burn. Add flour, then boil-
ing water and let cook until*
