Thorough distribution of the rennet in themilk must be effectedby tlilutiing the rennet extract and by vigorous stirring. 2. Sufficient rennet to coagulate the curd into as state :fit for cutting in from $5 to 40 amims:xtes at from 56 o to 9U? elaat►ld lie use - ca. The contents of the vat should be per- fectly still when eoagulation commences. Vihr.ition of the floor and of the vat during the thickening of the milk causes waste. 4. 'The horizontal knife should be used first in eating, and active stirring should aotcoenmence until the cubes of curdy become •aligbtiy heated. 5. The temperature should beraised grad - orally to 96* or 93 0 Fahr. G. The stirring should be contiued until the curb particles are so well " cooked" or 't"dried" that when a handful has been pres- ,ed for u, few moments they will fall apart oven as the result of any slight disturb - 'Anne. eh As soon as the presence of acid is dis- tcrnlible by the hot iron test, the whey -should be removed. In the case of gassy lairds, a further development of acid before the drawing of whey will be beneficial. -8. Hand stirring will be of advantage un- til the cord is firm. 9. The temperature should be maintained tri or above 910 . 11'. The curd should be allowed to mat in- to one mass. 11. It should be turned so frequentlythat whey will not collect or stand in small pools in or cni it. 42. If it becomes gassy it should be aired ;if need be by grinding and stirring) and $(fturwards kept at a temperature above 24* 13. The gas formed in gassy curds hinders the +development of acid ; and the presence of acid prevents the formation of gas. The treatment should provide for the removal of the gas by aeration and the maintenance of temperature by the application of hot water .to :the curd or steam to the vat or sink in which it is. 14. Close matting and packing of the curd are beneficial only after the curd is sufficient- ly sdry and when aeration is provided for. 15. 'When the texture of the curdbecomes stringy in its nature itshould be put through the cutter or grinder. 18. Aeration shouldbe effected by the etirringof the curd before the addition of salt. Usually fifteen minutes of such treat- ment will suffice. 17. Salt should be added at the rate of from 21'to 2/ lbs. per 1,000 lbs. of milk ac - 'ending to the dry or wet condition of the :card. A judicious variation in the quantity cif salt .should be made in proportion to the moist or dry state. 48. The "hooping" of the curd should be- gin -when the harsh surface, produced on .eat& piece of curd by the salt, commences to give place to a slippy, mellow quality. 10 -Shoulders or projecting edges on cheese are unsightly evidences of careless workman- esltip,.and lessen their value from 2s. to 3s. leer cwt. in the English markets. Careful pressing and bandaging and the turning of the -cheese in the hoops in the morning will lre"venttheir formation. The pressure should be continued for at least twenty hours. In that way cheese can be finished having an attractive, neat, symnmetrical and suylisi. appearance. The sprinkling of cold water in the curing rooms in the morning and just after noon will redncethe temperature. 2l. The curing room ahem:U be thoroughly -entilated, and should be kept clean.. Now pour these various colored fluids into a clear flint -glass bottle or other similar container just large enough to hold them all, beginning with the chloroform and fol- lowing with each in succession down to the alcohol. They should all be added care- fully down the side of the container, and without agitation, and, lastily, enough more alcohol should be added to completely fill the container after the insertion of the cork. This will give a bottle with six sepa- rate layers of colored fluids, and presents a very pretty sight. 31r. D. F. Appleton's wonderful Jersey Eurotisama made, from April 22d, 1889, to April, 1tiit0, 045 pounds, nine ounces good merchantable butter, salted one ounce to the pound. The butter was churned only once a week. The best week was the eighth, which was twenty-seven pounds, one and one-half ounces. The best four weeks was from the eigth to eleventh, which produced ninety-nine pounds, one and one-half ounces. The first three months were the largest, and produced 290 pounds, one and one-half -four twent ounces.. Her feed began with y pounds of grain per day, one-third each of corn .meal, ground oats and wheat mid- dlings. This was reduced after a month to twenty-one pounds in the same proportions, which for most of the period thereafter con- tinued to be the ration. At the end of the fourth week bran was substituded for mid- dlings. The grain was mixed with cold water, and some portion of the ration was generally spread upon hay or ensilage. Sometimes one pound of oil meal was sub- stituted for the same quantity of corn meal. In addition to the grain she had three hours perday of fair pasture and what hay she would eat. After the pasture season her feed in the barn was hay and ensilage out and steamed, generally some of both. each day, about one-half bushel of ensilage and as much hay as she could eat. Each day a peck of either carrots or beets was fid. - English Law and the Railroads. The railroads of England must be easier to reach through the law than those of this country.
