To co vince ourselves we made a
list ofmain course dishes of fish,
eggs, cheese and vegetables eas-
serOles and were. surprised at' the
variety, for 'both:leisurely 'Sunday
menus as well as busy day meals.
It is also amazing how many in-
expensive dishes can be good -eat-
ing, Lenten specials and family
dipe8 fo,r....anytime-of,the-year.

Main course dishes for Lent:
1. Limawith Mushroom
Sauce, Vegetarian Baked Beans,
Kidney Beef Loaf with Syrup,
2. Welsh Rarebit, Cheese Fondue,

boiler by stirring the flour and
seasonings into the fat and
adding the milk, stirring. constant -
Ily. When thick and smooth, add
grated or Sliced cheese and allow
to melt. Pour over the beaten
egg yolks. Mix well. Then pour
; slowly into. beaten egg white,
biend-
ing carefully until a 'light fluffy
• mass is formed. Bake in a large
casserole or a small roasting pan at
300 degrees in electric oven for
112 hours. Makes enough for six:
; Serve at once. ,.
To make best use of oven heat:
Bake souffle and sliced carrots .in
covered, casserole (containing 1:,
inch water). On shelf above bake

Salmati Loaf, Sardines with Cel-
ery Sauce, Baked White • Fish,

• Rice and Tomato Casserole
1 cup dry rice
1 tbsp. fat
1 tin canned tomatoes (2 cups)
)42 tsp. salt
1/:: cup grated cheese
2 tbsP. chopped pimento
4 slices bacon, cooked and chapped
Boil the rice in salted water until
tender. Combine with, remaining;
ingredients. Pour into casserole
and bake at 425 degrees until top.

heat: Bake 2 pie plates of scones or
tea biscuits alongside casserole.
• Salmon Nest
2 cups mashed potatoes
1/2 cup grated cheese
1- egg yolk
1 cup medium cream sauce
1 lb. steamed salmon
1/2 cup buttered crumbs
Line ,,greased casserole with
fluffy mashed potatoes. Add cheese
and egg yolk to ,oream sat:6. Pour
half of cream sauce over potatoes.
Add boned salmon which has been
steamed or boiled in cheesecloth.
Top with -more cream sauce and the
buttered crumbs. Bake at 350 de-
grees in electric' oven for 30 min-
utes or until lightly !browned. To
make the best use of oven heat:
Bake -• Salmon Nest and Harvard
Beets (from canned beets) on third
shelf from bottom of oven. On

Miss M. P. asks: What is a
simple, sure way to make Hollan-
daise sauce andis it served hot or
cold?
Answer: Serve Hollandaise sauce
hot with hot dishes and cold with
chilled foods. The easy way to
make this 'sauce is in a double'
boiler. Melt 3. thSps. butter and
blend in '2 tbsps. flour and 1,12 tsp..
salt. Gradually stir in % ,cup milk
(or equal parts of evaporated milk
and water). Cook, stirring con-
stantly for 8 minutes. Pour sauce
over one slightly beaten egg,- then.
refurri.esauce to pan. Cook 2 min-
utes and beg in 14 cup mayonnaise
and a pinch or cayenne. Serve
immediately over Baked Fish.
Mr. T. B. asks: for a recipe serv-
ed in camps called Bean Pie.
Answer: Perhaps this inexpen-
"sive,quick-cooking recipe for Bean
Pie is similar to camp -style:
Line an 8 inch pie plate, with
pastry and press edge with fork.
In a saucepan heat 1 can -(15 oz.)
baked beans, '/ tsp. dry Mustard,
dash of -sat,' few grains 'cayenne,
and 1 cup mile. Stir to combine
ingredients over electric element
turned medium. When hot, add 2
beaten eggs. Pour bean mixture
into pastry; lined pie plate. Bake
for ten minutes in 'preheated oven
of 450 degrees then lower the in-
dicator to 350' degrees for about 20
minutes. Cut in wedges and serve
hot with chili sauce, along - with
cole slaw.
