Several weeks ago, I requested
recipes for old-fashioned Dutch
apple pie. The response was
terrific, and I have been busy
baking Dutch apple pies ever
since. You may be surprised at
the variety of recipes, and for
that very reason I suggest you try
any that are different from what
you normally bake. Unfortun-
ately, not all the recipes sent in
can be published, but they will be
kept on file. Please don't let this
discourage you from sending in
your recipes. They are appreci-
ated very much

Enough apples, peeled, seeds
removed and quartered for a nine
inch pie pan. Combine a cup of
white sugar, three tablespoons of
flour, and put in pan alternately
with the apples. Pour over all, 1/2
cup cream, or a small can of
Carnation milk. Sprinkle with Y2
teaspoon cinnamon. I cover this
pie with a round cake tin, or
another pie pan. It. bakes and
steams 'at 375 degrees for about
three quarters of an hour.

In a nine -inch unbaked pie
shell, sprinkle 1 tablespoon of
flour. Peel, core, and quarter
apples. Fill pie with apples. Mix
3/4 cup brown sugar amd 3 table-
spoons of flour. Sprinkle over
apples in pie shell. Sprinkle with 1
tablespoon cinnamon. Pour 4
tablespoons of sour cream over
'pie. Bake at 350 degrees for 45
minutes.

Make pastry for two crust
nine -inch pie. Line pie pa with
one crust. Filling: mix 3/4 up to 1
cup sugar, and 1 t aspoon
cinnamon or nutmeg. Mix lightly
through 7 cups sliced peeled
apples, Heap up in pastry lined
pie. pan. Add % cup 'raisin, if
desired. Dot with 11/2 tablespoons
butter. Cover with top crust.
Mpke extra large slits in top
crust. Bake 50 to 60 minutes. Test ..
aples with fork. Five minutes
btee baking 'time is Up,• remove
pie from oven. Pour t cup heavy
cream through slits in top crust.
Return ,to oven and finish baking. ,
When pie is cooled (not cold) -
spread it with icing: a little con-
fectioner's sugar. Moisten with
cream or. Milk to spreading
consistency. Add ti/2 teaspoon
almond flavouring. Just drizzle
this over the pie.

DUTCH APPLE PIE
Temperature 375 degrees
Cooking time 40-45 minutes
Plain pastry
3 cups apples, cut in eighths
1 cup brown sugar
1/4 cup margarine or shortening
1/4 cup sifted pastry flour
1 teaspoon cinnamon
1/4 cup sour cream
Line nine -inch pie pan with
pastry; flute on edge. Pare, core,
and cut apples in eighths.
Arrange on unbaked pastry shell
in regular pattern. Combine
sugar, margarine, flour, and
cinnamon. Mix till crumbly.
Sprinkle crumb mixture over
apples. Pour sour cream over.
Bake until apples are tender.
Serve slightly warm. Serves six.

OLD-FASHIONED
DUTCH APPLE PiE
Line your fairly deep pan with
pastry of your choice, making
sure you cover rim, and trim off
overlap. Sprinkle about 1 table-
spoon of flour in bottom of pre-
pared pastry in pan. Quarter
enough peeled and cored apples
(I always use Northern spy .. .
best for flavor, but other baking
apples will do). After you quarter
them, slit about four slits down
the rounded side of each quarter
but not right through. Cover
pastry -lined pan with apples laid
in close . .. real close. You can
have a few extra quarters here
and there on top of layer but don't
stack. Mix 1/2 cup white sugar, i/2
cup brown sugar together with a
small amount of flour, about a
good rounded tablespoonful.
Sprinkle this sugar mixture all
over top of apples. Then drizzle
4-5 tablespoons rich cream or just
Bream (table cream) over. Top
or dot lots Of bits of butter here
and there over all. Mix either 1'/i
teaspoons of nutmeg or cinnamon
Or apple pie spice with a little
sugar and sprinkle ov'e1 top. it
just use the spice without the
sugar. Bake at 450 degrees till
apples are tender and pie starts
to bubble. Let cool before cutting.
