A Meat claims the biggest fc share of the food dollar, so this is where she first starts cutting. She does this by buy- ing economy cuts and by util- izing leftover meats in meal planning. This need not lead to dull meals. COOKING CORNER Leftovers, economy meats aid budget By SUSAN DELIGHT li ti SIli. tF m DIXIE YAM AND FRANK SKILLET 2 medium green peppers, thinly sliced 8 frankfurters cut in 1 -inch diagonal slices 1 clove garlic, halved 2 tablespoons butter or margarine Y4 cup brown sugar TI 2 tablespoons cornstarch 1 teaspoon salt FI 1 teaspoon instant minced onion 21 cups grapefruit juice 1 teaspoon soy sauce 4 medium yams, cooked, peeled and quartered or 2 cans (16 ounces each) yams, drained FI Si S1 SI SI Cook green peppers, frank- furters and garlic in butter in Ti large skillet until peppers are tender; remove garlic. Mix M together brown sugar, corn - FI FI starch, salt and onion; gradually stir in grapefruit juice. Add to frankfurters along with soy sauce. Cook and stir until sauce thickens; add yams and heat. Serves four. LOUISIANA YAM HAM CAKES 2 eggs Salt and pepper 144 teaspoons�eaprepared md 1 pound ground cooked ham 1 cup dry bread crumbs One-third cup chopped onion Butter or margarine, soft- ened 2 cans (16 or 17 -ounces each) Louisiana •yams, drained and quartered or 4 medium Louisiana yams, cooked, peeled and guar- ' tered. Beat eggs with % teaspoon salt, 4 teaspoon pepper and the mustard in large bowl. Blend in ham, bread crumbs and onion. Shape mixture into 6 'round patties about 344 inches wide. Melt 2 table- spoons of the butter in skillet over medium heat. Add ham cakes and saute until browned on each side. Add more butter as needed. Place patties on warm serving plate and keep warm. Melt about 3 table- spoons butter in skillet; add yams and saute until hot; stir occasionally and season to taste with salt and pepper. Spoon yams over ham patties and serve. Serves six. Resolve to serve more fish. Fish and shellfish (not in- cluding shrimp) are excellent alternatives to meat because of their low total fat and low - saturated fat content. THE BUREAUCRATS HERBED PAN -DRESSED FISH 6 small pan -dressed\ fish, fresh or frozen 1 (8oz.) bottle Italian salad dressing 2 teaspoons salt 2 cups finely crushed corn - flake crumbs 2 tablespoons mixed herbs 11-2 teaspoon oregano Ya cup chopped parsley Thaw frozen fish. Clean, wash, and dry fish. Place fish in a single layer in a shallow baking dish. Pour" Italian dressing over fish and let stand 30 minutes. Remove fish from sauce and sprinkle with salt. Combine crumbs with herbs, oregano, and parsley. Roll fish inherbed crumbs. Place fish on well - greased pan. Cook in a slow oven, 300 degrees F., for ap- proximately one hour or until fish flakes easily when tested with a fork. Makes six serv- ings FISH -WITH WILD RICE -MUSHROOM STUFFING 3 to 4 lb. dressed snapper, or otlir large fish, fresh or frozen 3 tablespoons polyunsatu- rated oil 161 cup thinly sliced green onion and tops 2 teaspoons salt �a teaspoon pepper Wild rice -mushroom stuff- ing (see recipe below) Clean, wash, and dry fish. Sprinkle inside and out with salt and pepper. Stuff fish loosely. Close opening with small skewers, or toothpicks. Pour oil on top of fish and sprinkle with sliced onions. Place fish on well -greased pan inside oven. Cook in a slow oven, 300 degrees F., for approximately one hour and 30 minutes or until fish is done and flakes easily when tested with a fork. Remove skewers. Makes eight to 10 servings. Note: Six pan -dressed fish could be used instead of the snapper. The cooking time would be approximately one hour. WILD RICE - MUSHROOM STUFFING (4 oz.) package wild rice 4 tablespoons polyunsatu- rated oil 1 cup chopped onion 1 cup chopped ceiery 1 (21 oz.) jar sliced mush- rooms 1 cup chopped parsley v teaspoon pepper Cook wild rice according to directions on package. Saute vegetables in oil until vegeta- bles are tender. Combine all ingredients and mix thor- oughly. Makes approximate- ly 21 cups stuffing. UESTONS WOMEN ASK Menopause symptoms vary with the individual By ELEANOR B. RODGERSON, M.D. Q. What can you do if the symptoms of the menopausd go on beyond the menopause? A. The symptoms of the menopause do go on beyond the menouse, since meno- pause means the time when the menses stop. The symp- toms begin before and go on afterward. The duration varies with the individuia. They may be negligible, or they may be severe. What they are cannot be predicted. Estrogens for treatment are prized because, they bring such marked relief and can be taken indefinitely. Atrophy of the vaginal mucosa (thinning and shrinking of the vaginal lining) usually becomes more and more of a problem as a woman ages and, if she is having sexual intercourse, treatment will be needed to restore the normal softness. Hot flashes, headaches, and irritability may gradually subside by themselves, al- though a woman may be hard to live with while these are going on. Estrogen improves well-being. What you can do for the symptoms after the meno- pause is the same as what you can do before and at the time of. Q. My face has always been oilP and I have had to get treatment for acne. I think my birth control pills are making it worse. Is this possible? A. Yes, it is possible. Oral contraceptives have two hormones in them most of the time and these combinations, in differing amounts, may produce estrogenic effects, androgenic effects, or neither. You are probably on a low estrogen p. ' and are getting an androgenic effect, an increase in the oiliness and acne of your skin. Speak to your doctor4about this and he may be able to recommend another type. There may be reasons why you should not take' more estrogen, so ask him. A solution to your prob- lem may not be simple be- cause there are always excep- tions among the majority. Some women on the estrogenic types notice an in- crease in acne. Q. I am just getting over an attack of herpes. Does this mean I will develop cancer later in life? A. The herpes viruses are being studied intensively and several authorities suspect they may be involved in can- cers. No one has decided for sure whether the herpes virus. found in cancer of the cervix comes after the cancer, or before it. No one can say that a wom- an who has a herpes virus in- fection one year will develop a cancer later in her life. Visit any place that stocks sewing supplies and you will notice how the various kinds of cloth are wrapped in bolts. The center, or core is made of cardboard, which like so many containers, is usually thrown away, burned or oth- erwise discarded. Made of a light, smooth cardboard that is both sturdy and porous, these centers are usually 8 inches wide and 24 inches long. Some fabrics may be packaged in longer or shorter pieces, but this .is-usu- ally the standard size. Two can be taped together if you want an extra large wall hanging or you can arrange a series of them once they are decorated and ready to be hung. The first step is to wrap the entire surface. Do the ends first, then the rest of the card- board. Use sheets of light-col- ored construction paper 12 by 18 or 9 by 12 inches in size. Wall paper, contact paper, burlap, or other fabrics are alsp suitable if preferred. This material can be held in place either with glue, thumb tacks, tape or pins. The important thing is to have a smooth area. Then attach drapery rings or picture hooks to the back or top and this lightweight bulle- tin board is ready for the wall. It will prove most handy for pinning up souvenirs, pic- tures, iatures, or any decooatlons one wishes to add for a distinctive roam touch. The nice part about such a bulletin board is that it can be changed when- ever you wish. Whether you like to hang reminder- notes or ribbons, save party inv1ta- - tions or letters from friends, this bulletin board can both serve notice and be\nottoed-by all who pass by it. Peter Herrndorf, head of cur- rent affairs for the CBC English Services Division* announced today that Adrienne will be fea- tured in a key segment of a new hour-long weekly magazine show that will be launched during the '75-'76 network television series. Mr. Herrndorf said, `Adrienne will use her journalistic talents on the new series in a similar way to her very effective handling of Adrienne At Large during the current season." Adrienne At Large, which has just concluded a 15 -week season to a limited network of CBC sta- tions across the country, will not return in the fall. . "Adrienne will concentrate her total time on the new magazine program which will be telecast to the full CBC network. She will have a great deal of flexibility in terms of the length of her item and the scope will include both national and international sto- ries," Mr. ,Herrndorf said. He said a new hostess will be sought for the fall series of Take 30. Mr. Herrndorf also announced that with the conclusion. of the current season in March, Up Canada will come to an end. "The series has done a good job during its two seasons and some of its elements will be included in the new magazine show," he said. George Robertson, executive prodicer of Up Canada, will be- gin work on a major documraen tary series for the 1975-76 season after the windup of the Up Can da series.
