This career eventually led Miss Rasmussen to the United States. "Im's glad I chose a career -- I love my work and I love America," Mist Rasmussen said. Home economics director for the West Division, Denmark Cheese ssoclation, Miss Rasmussen spends part of her time developing recipes at a test kitchen in Concord, near San Francisco, and the rest of the time traveling around the country promoting Danish cheese. "When I first came to this country I was surprised at how many salads you served here," she said. "We do not serve so many salads in Den- mark. But, they are beginning to serve more there — the last time I visited my family in Denmark I noticed this." • Though she loves this coun- try, the redheaded Dane is not sure she would consider marriage to an American. ",I say that now, but I might change my mind sometime in the future," she admitted smiling. When she°entertains Ameri- cans in her home,' Miss Ras- mussen says •she always serves European -type food. "But, when I entertain visi- tors from my homeland, I 'try to give them foods ' of this country," she said. She also 'directs the pro- grams of the Karoline Girls who help • promote Dann cheese in this'country. t`The Karoline Girls are trained in Denmark to be .Ogoodwill ambassadors for Danish cheese — they help with taste -testing programs and demonstrations in super- markets and at special civic events," she explained. "They are stationed all over 'the world." The best-known Danish cheeses in this country are Esrorn (Danish Port Salut), Havarti (Danish Til,sit), Samir sae, Danbo, Tybo and Dana- blu (Danish Blue), Miss Ras- mussen said Miss Rasmussen suggests that when storing cheese it should be covered and stored in a cool place. Before storing in refrigerator, wrap the cheese in foil, plastic wrap or an airtight container. "Mold is harmless," she said. "Just scrape it off." One of Miss Rasmussen'( favorite recipes is Hamburg- ers with Ost (cheese), pre- pared the Danish way, and Danablu Dip. Something went wrong, I imagine. • Perhaps the baby was too slow in ad- vancing, perhaps the mother was exhausted, perhaps she began to bleed too much. He had to see how he could help her. It was for her advantage. I doubt the doctor had one thought about demeaning, or not demeaning himself. Any- one in the medical field knows that when there is an emer- gency, all attention centers on the welfare of the patient, not on the staff.
