over Danish wedding

Miss Ester Rasmussen did
not follow in the footsteps of
most other young women in
Gudbjerg, Denmark, for she
chose a career rather than
marriage to a young man of
the village.
This career eventually led
Miss Rasmussen to the United
States.
"Im's glad I chose a career
-- I love my work and I love
America," Mist Rasmussen
said.
Home economics director
for the West Division,
Denmark Cheese ssoclation,
Miss Rasmussen spends part
of her time developing recipes
at a test kitchen in Concord,
near San Francisco, and the
rest of the time traveling
around the country promoting
Danish cheese.
"When I first came to this
country I was surprised at
how many salads you served
here," she said. "We do not
serve so many salads in Den-
mark. But, they are beginning
to serve more there — the last
time I visited my family in
Denmark I noticed this."
• Though she loves this coun-
try, the redheaded Dane is
not sure she would consider
marriage to an American.
",I say that now, but I might
change my mind sometime in
the future," she admitted
smiling.
When she°entertains Ameri-
cans in her home,' Miss Ras-
mussen says •she always
serves European -type food.
"But, when I entertain visi-
tors from my homeland, I 'try
to give them foods ' of this
country," she said.
She also 'directs the pro-
grams of the Karoline Girls
who help • promote Dann
cheese in this'country.
t`The Karoline Girls are
trained in Denmark to be
.Ogoodwill ambassadors for
Danish cheese — they help
with taste -testing programs
and demonstrations in super-
markets and at special civic
events," she explained.
"They are stationed all over
'the world."
The best-known Danish
cheeses in this country are
Esrorn (Danish Port Salut),
Havarti (Danish Til,sit), Samir
sae, Danbo, Tybo and Dana-
blu (Danish Blue), Miss Ras-
mussen said
Miss Rasmussen suggests
that when storing cheese it
should be covered and stored
in a cool place. Before storing
in refrigerator, wrap the
cheese in foil, plastic wrap or
an airtight container.
"Mold is harmless," she
said. "Just scrape it off."
One of Miss Rasmussen'(
favorite recipes is Hamburg-
ers with Ost (cheese), pre-
pared the Danish way, and
Danablu Dip.
HAMBURGERS
W1TH OST
1% pounds ground beef
Salt, to taste
Pepper
6 tbsps. butter
4 slices Danish Tybo or
Samsoe cheese, 3/4 -inch
thick
' cup red wine
3medium size onions, sliced
in thin rings
Shape six hamburgers, 1 -
inch thick. Season with salt
and pepper. Heat 4 table-
spoons butter and fry the pat.

rings in remaining two table-
spoons butter until golden
brown. Cover each hamburg-
er with a slice of cheese and
top with the sauted onions,
then add the remaining red
wine. Place in warm oven, 440
degrees, for approximately
five minutes, or until cheese
starts melting.
Serve with green salad and
slices of warm crisp French
bread.

one tablespoon of good
brandy and a few chopped

'Morning -after'
pills described

Q, How are "morning -af-
ter" pills coming along?
A. For an emergency medi-
cation, the morning -after pills
seem to have as definite place.
Several college campus series
have been run in the United
States and in Canada and
there have been no known
pregnancies. Of course, there
is no way to be sure how runny
pregnancies would have been
there in the first place, but
there surely would have been
a few.
Diethylstilbestrol (DES)
and other estrogenic hor-
mones were used. When the
DES ( the synthetic estrogen
implicated in cancer found in
a few young women whose
mothers took it after 1945 to
prevent spontaneous .abor-
tions) was taken, the college
women were told and under-
stood that, if they were preg-

nant and heir pregnanciee
continued, they would have to
get abortions induced in the
usual way. Other they
might deliver affected girl
babies.
It ought to be remembered
that this birth control tech-
nique IS a one-time thing and
cannot be used after every
sexual intercourse.
Q. I recently went to a self-
help group and was given an
article to read about the birth
stool used for deliveries in the
Middle Ages. The author said
the doctors, all male, dis-
carded this stool because they
didn't want to kneel in front of
women and demean them-
selves. Is this' true?
A. I don't know when the
first doctor put a woman up
onto a table for delivery, but I
feel he probably wanted to see
what was happening and what
he could do about it. If his pa-
tient had been having a nor-
mal labor, he would have let
her deliver any way she
wanted. Something went
wrong, I imagine. • Perhaps
the baby was too slow in ad-
vancing, perhaps the mother
was exhausted, perhaps she
began to bleed too much. He
had to see how he could help
her. It was for her advantage.
I doubt the doctor had one
thought about demeaning, or
not demeaning himself. Any-
one in the medical field knows
that when there is an emer-
gency, all attention centers on
the welfare of the patient, not
on the staff.
Then, I can imagine that the
convenience of the table for
deliveries becameo'ebvitsla
it was used more and more. ,
, The length of time a woman is
on a delivery table is a very
small part of the total labor
and women are encouraged to
move about, as they feel able,
beforehand, if there are no
contraindications.
A lot of space has been
given to castigating the cus-
tom of attaching straps to a
woman's arms when she is on
the table. This routine also
has practical reasoning be-
hind it. Before antibiotics,

A, Fill the container with
boiling water, then allbw this to
cool. The paraffin will\€loat to the
surface of the water.
Q. How can I renovate a
stiffened chamois?
A. By soaking it in warm water
to which a spoonful or so of olive
oil has been added.
