Ros, who lives With his fam- ily on a hilltop overlooking Ti- juana, Mexico, brought the paella recipe with him from his native country, Spain. An insurance agent, Ros prepares the dish for friends and for organizations of which his wife is a tnember. He has also entertained a number of Mexico's famous bullfighters . "Sometimes friends will stop over in Tijuana when fly- ing from Mexico City to some- where in the United States just to enjoy the paella," said his wife. "They will send a telegram asking if he will pre - pare the dish for them." Ros has a paellera, a shalt low, . three -foot -wide round iron pan which he brought with him from Valencia, Spain, 25 years ago. "Paella is named for this two -handled ' frying pan," Mrs. Ros explained.
