Enrique O. Ros has gained
renown for the way he pre2
Pares one dish -- paella.
Ros, who lives With his fam-
ily on a hilltop overlooking Ti-
juana, Mexico, brought the
paella recipe with him from
his native country, Spain.
An insurance agent, Ros
prepares the dish for friends
and for organizations of which
his wife is a tnember. He has
also entertained a number of
Mexico's famous bullfighters

He says he has made paella
for as many as 80 guests but
prefers to keep the guest list
to smaller numbers.
"Sometimes friends will
stop over in Tijuana when fly-
ing from Mexico City to some-
where in the United States
just to enjoy the paella," said
his wife. "They will send a
telegram asking if he will pre -
pare the dish for them."
Ros has a paellera, a shalt
low, . three -foot -wide round
iron pan which he brought
with him from Valencia,
Spain, 25 years ago.
"Paella is named for this
two -handled ' frying pan,"
Mrs. Ros explained.
Ros said that ingredients
for paella vary fratn°Fegion to

"It is according to the food
available in each region," he
said. "In the interior paella

Like many men cooks, Ros
cooks "by feel." He adds a
handful of this, a pinch of that,

2 pounds large shrimp, un-
shelled
1 bulb of garlic (several
cloves) peeled
11/2 cups olive oil (or half
olive and half vegetable
oils)
4 small chickens, cut up
21 pounds lean pork, cubed
6 tsps. saffron threads
soaked in two cups water
3 green peppers, diced
1 medium onion, diced
3 cans tomato sauce
1 pound frozen peas
1 pound frozen lima beans
6 dozen clams, scrubbed
and dried (frozen or fresh)
61 pounds uncooked con-
verted rice
1 oz. yellow food coloring
3 small jars pimiento
2 pounds shelled small
shrimp
Heat .bll and fry garlic and
large shelled.sl primp for a few
minutes: Remove shrimp and
garlic and add chicken first
then pork, onions and peppers
to the hot oil. Spilnkle with
salt and brown slowly. Md to-
mato sauce and enough water
or bouillon to .Cover and cook
for 5 to 8 minutes. Add rice
and saffron. anti bring to boil.
