And canned enchilada sauce. The author of "The cuishifos of Mexico" is more likely to be concocting images of her Bola de Queso Reileno (Stuffed Cheese) whose ingre- dients and methods take up almost three pages of her lovely book, or her On .home- rnade tortillas which can be found in many of her Mexican dies. Her book Nemo selected carefully, she says, because Mexico does not have one cut* eine but several. First there are pre-Colum- bian dishes "that have abso- lutely no outside influences" and there are the Spanish, French and Italian touches found in foods in various sec- tions of Mexico, she reports. You'll bind Spanish spices, touches of France in Mexico's breads and pastries and, from Italy, the use of some pastas. "Mead foOdi are �Y earthy l surprisp ," *ay*' irs. "Thereis almost a clash of flavors and textus." And everything ;isn't hot and spicy, she emphasize.. In this countryk she •also ob- jects to the generous use of an 411 -purpose enchilada sauce "that is poured over every. thing and is ghastly."` "There are probably ` 2,000 ;ata' tions of enchilada sauce and all are terribly .exciting and different." Her book can about,:.she says, simply because "there was absolutely no real book on Mexican cooking. And .all of the quick methods and all of the quick Mexican foods have been . dealt with somewhere else." ' The author says she delib- erately did not strive for sten- plilcitY; She began testing and • gathering Mexican dishes during the years she lived with her late husband, Paul Kennedy, who was a .New York Times correspondent for Mexico, Central Alnnerica and the Caribbean. Mr. Kennedy died in 1967 of carver. "It was that year that Craig Claiborne, food editor of the New York Times, suggested I start teaching people Mexican cooking," she says. So, one Sunday afternoon in January, 1969, Diana Ken- nedy opened the first cooking school of Mexican cuisines .in her New York apartment kitchen. Although she has had to cease the classes because of injury to her feet through jogging, she plans to resume the classes when she can. The book then evolved from the classes. Season thern and set the aside. In the same fat, fry the onion, garlic and celery for about Ave minutes, without letting there brown. Chop the tomatoes roughly and add them, with the resit of the ingredients, to the vegeta- hies in the Dutch oven. Place the. chickens on their sides in the tomato mature. , Cover the pan and bake for about 20 minutes. Turn the chickens over and continue baking them until they are tender.-- about 20 to 25 minutes. Remove them from the sauce and keep them warm. In a blender blend"the vege- tables and juices from the pan to a smooth puree. °Return the puree to the pan and cook it over a medium flame until it has reduced find thickened -- 10. to 15 minutes. Add the wine and continue cooking with the sauce for about five minutes, stirring it from time to time. Add the grapes and continue cooking the sauce over a brisk flame for five .minutes more. Place the chickens. on the dish and pour the Sauce over them. Makes eight servings. TORTA DE CIELO (Almond sponge cake) A 9 -inch spring -form pan Parchment paper Butter All-purpose flour 12 pound almonds ( soaked for -six hours and ground) 5 eggs, separated Pinch of 'salt. it pound granulated . sugar ka teaspoon baking powder 1 ..tablespoon all-purpose • flour 1 tablespoon brandy A drop of •almond extract monPodsur hot ;wyater yeather.e Qal1- covered, and•., leave. them to soak for at least six hours. (Remove the skins — they should slip right off — .if they are not already skinned.) Line the bottom/of the pan with parchment paper. Butter the paper and sides of the pan well, and dust with flour. Chop the nuts roughly and grind them „in a blender or spice grinder a little at a time. They should be neither too coarse nor too fine. Set aside. Beat the egg whites with a beater until they are fluffy. Add the salt and continue beating until they are stiff. Add the yolks one by one . and continue beating until they are all incorporated. Mix together the ground al- monds, sugar, baking powder, and one tablespoons all-pur- pose flour. Beating at a low speed, gradually add them to the eggs. Add the brandy `and almond extract and pour the batter in- to the prepared pan. In a 325 • degree preheated oven, bake for 1'4 hours in the middle level of the oven. Let the cake get cold before removing it from the pan. Makes 12 serv- ings. A 4 -month-old Sheffield, England, baby whose mother thought he was dead was shocked back to life by the siren on the police car in which he was being rushed to the hospital for emergency care. One policeman tried first aid on the apparently dead boy while the other policeman drove the car, switching on the two-tone siren, at which the baby jumped and coughed his way back to conscious- ness. When working with leather, wood, paper or metal, one can stamp or press out a raised design through the use of shaping tools or "dies." Let- terheads and business cards, tooled leather belts and wal- lets,'or decorated silver and other metal objects often de- pend on embossing for their artistic beauty. The Greeks were probably the first to make embossed coins and used dies held on •anvils. Today, iritri,cate stamping machines make pennies, nickels, dimes, quar- ters and fifty cent pieces.
