Certain foods, to be enjoyed
during the holiday season, can be
prepared in advance. However,
food specialists at the Ontario
• Food Council, Ministry of Agri-
culture and Food warn against
stuffing your Christmas turkey
the night before. Poultry stuffing
is moist, and generally a perfect
environment for _rapid bacterial
growth.
All poultry should be cooked as
soon as it is stuffed. Stuffrthe bird
loosely to allow heat°'to penetrate
more quickly. throughout . the
stuffing. Remember, never stuff
ahead of time—the time you save
is not+worth the risk of rapid bac-
terial, growth.
BEFORE TURKEY
Roast peacock was a Yule
delicacy of early England.
