For smooth gravy use one to
two tablespoons of dripping from
the roasting pan and two table-
spoons of flour for each cup of
liquid. Stir the flour into fat
then add the cold liquid and
stir until thickened. Season to
taste and pour into heated gravy
boat. Incidentally two cups of
gravy usually makes about 6
servings.

New directories
out this week
Bell Canada's new -look,
multi -colored telephone direc-
tory will be introduced in Wing -
ham &ring this week, accord-
ing to K. C. (Ken) Aay, Bell
manager in Owen Sound.
The cover on the new book
depicts the word "TELEPHONE"
repeated over and over again in
a square design that funnels to-
ward infinity. The characters
in the word are designed in a
.computer or data processing
type face.
The new book will continue
to -underline Bell's campaign to
further acquaint area customers
with the term "Directory Assist-
ance", which was recently in-
troduced to replace the older
term "Information".
Mr. Aay said use of the term
"Information" in the past had
been misleading to a good num-
ber of Bell customers.
"Some people misconstrue
its meaning, " he said. "There
have been many cases where
customers have called in t h e
hope our operators can give
them information on a great
number of topics --things like
where the liquor store is locat-
ed, who's who in• the municipal
government and the like. The
new term-- "Directory' Assist-
ance" --more accurately d e -
scribes the service our opera-
tors provide.."
Mr. Aay said about 2500 new
directories will be delivered in
Wingham this year, as compar-
ed to 2200 in 1968.
