historic home will be
known throughout south-

home mean the project is
"unique" in the province,

Foundation is staffing the
home with the assistance
of a Community
Development Program
grant from the federal
government until next
fall.

Carrots are versatile
Fresh carrots are one
vegetable that many
people like to keep on
hand because of their fine
flavor and great ver-
satility. Right now, there
are lots of fresh Ontario
Carrots on the produce
counters say the
marketing specialists at
the batario Ministry of
Agriculture and Food.
Ontario's carrots have
now all been harvested
and are presently being
kept in cold storage. Cold
storage facilities enable
the carrots to be stored
throughout the winter
months so they'll be
available on the retail
counters well into spring.
To help preserve the
carrotsfreshness once
they leave the cold
,storage areas, a couple of
things are done. For one
thing, the tops of the
carrots are removed.
This helps to preserve the
carrots' crispness by
keeping the moisture in
the carrot and preventing
it from being drawn out to
the leaves. As well, the
carrots are packaged in
plastic bags, which help
to protect against
bruising and help to
