Serve these:....
FAVOURITE BRAN
MUFFINS
Rind of 1 orange
1/4 cup brown sugar
1/ cup honey
1/ cup cooking oil
2 eggs
Juice of orange and fill cup with milk
1% cup bran
1 cup whole wheat flour
2 tsp, baking powder
1 .,do_
1 tsp. salt
1/2 cup raisins
one-third cup chopped nuts {optional)
1/4 cup wheat germ.
• Mix rind and sugar in blender until fine. Add
honey, oil, eggs, orange juice, milk and blend.
Mix .remaining ingredients in a bowl and add
blended mixture and mix until combined. Spoon
into greased muffin pans two-thirds full. Bake
375 degrees for 2Q'minutes.
The flavour of these muffins improve if kept in
an air tight container.

PUMPKIN DATE TORTE
• 1/2 c. chopped dates
1/2 c. chopped walnuts
2 tbsp. all-purpose flour
1/4 c. butter or margarine
1 c. brown sugar
two-thirds cup canned pumpkin
1 tsp. vanilla
2 eggs
1/2 c. all-purpose flour
1/x tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
l%.tsp. baking soda
•Mix dates, nuts and 2 tbsp. flour; set aside.
Melt butter over low heat; blend in brown sugar.
Remove from heat; stir in pumpkin and vanilla.
Beat eggs, one at a time. Sift together dry
ingredients; add to. phmpkin mixture mixing
- thoroughly. Stir in floured dates and nuts, turn
into greased 9 x 11/2 " round baking pan. Bake in
moderate oven (350 degrees) 20. - 25 min. Serve
warm with whipped cream or sweet Christmas
pudding sauce. Also great cold with:
