Thanksgiving is cer-
tainly a wonderful time of
year, but make sure your
feast is a safe one.
Every year, thousands
of Canadians become
unnecessary victims of
food -borne illness. Most
of these could have been
avoided by following safe
food handling or cooking
practices . • These are
particularly, important
during the festive season.
Here are a few safety
guidelines for handling
turkey from the food
consultants at
Agriculture Canada's
Food Advisory Division.
Unwrap the fresh
--turkey when you get it
home and wrap it loosely
in waxed paper or
aluminum foil. Store the
giblets and the -uncooked
fresh meat separately in
the coldest part of the
refrigerator. Always
cook the fresh turkey
within three days of
purchase..
If the meat is frozen,
leave the plastic wrapper
on. The refrigerator is the
ideal place for thawing, as
it keeps poultry cold until
it's completely thawed.
Allow about 10 hours per
kilogram or five hours
per pound and cook
within 24 hours of
thawing.
When thawing in cold
water, immerse the bird,
in its original wrapping,
in water changed several
times during thawing.
Allow about two hours
per kilogram or one hour
per pound and cook it
within 24 hours.
To thaw at ,room
•
temperature, silt the
wrapping along the back
and place the bird on a
rack on a tray to drain as
it thaws. For more even
thawing, place the
wrapped turkey in a
brown paper bag. Allow
three hoursper kilogram
or one and a half hour per
pound. Cook it im-
mediately or refrigerate,
and cook within 24 hours.

Middlesex.

the Home Economics
Program from the
Agricultural Office in

In any case, be sure to
wash in hot soapy water
all utensils and counters
that the bircktouches ands
dispose of the drippy
wrappings with care. For
example, if preparing the
raw bird on a cutting
board, wash the board
and knife thoroughly
before starting to prepare
another food, especially if
the second food is to be
eaten raw. And, of
course, scrub your hands
well.
Cook thawed_ turkey in
the same way and for the
same length of time as a
fresh bird. If you prefer
to stuff it, do so just
before roasting.
Check for doneness by
using ' a meat ther-
mometer. A temperature
of 70 degrees C (165
degrees F) in the stuffing
or 85 degrees C (185
degrees F) in the thigh is
your indication that, the
turkey is ready for the
table.
Remove any leftover'
stuffing from the bird and
chill or freeze, It will
keep two to three days in
the refrigerator or two
months in the freezer.
Chill or freeze the cooked
meat within two ho,urs or
refrigerate up to three or
four days. To freeze,
remove the bones and the
excess fat from the large
pieces. Or slice and cover
with gravy, sauce or
broth. It may be kept
frozen one month if not
covered with liquid;
otherwise, it can be
stored frozen for thr=ee
months.

In recent years the
Huron County Federation
of Agriculture has
spearheaded efforts to
increase awareness of the
problems associated with
the absentee ownership of
Ontario°farm land. In a
1979 study by the RDOP
for the Federation they
found highest foreign
ownership in Ashfield
Township, 2,123 acres and
Howick Township 1,637
acres. Recent purchases
in Colborne and other
townships may add more
to the list. These pur-
chases tend to be large
holdings of high quality
farm land. One of the
Federation's concerns is
what these large un-
tenanted holdings. will do
to the rural community.
The Federation wants
to do more than study y the,
problem. In the . _past
year, foreign purchasing
has appeared to ac-
celerate. At the Sep-
tember regional meeting

The Federation is
trying to•learn,how other
provinces have dealt with
this problem, so has
invited Gordon
MacMurchy, Minister of
Agriculture for
Saskatchewan, to be the
guest speaker at their
annual meeting on
October 23. - Mr.
MacMurchy has been
asked to speak an
Saskatchewan's
legislation on foreign
ownership and on the
farm start program.
Mr. MacMurchy's
comments will follow a
roast beef supper at the
Brussels area arena.

Federation is also
planning a seminar with
Mr. MacMurchy the next
day and details of it will
be available at the annual
meeting.

1. The Expropriations Act provides that,
(a) where an inquiry is requested, it shall be conducted by an inquiry officer
appointed by the Attorney General;
(b) the inquiry officer, -
(1) shall give every party to the inquiry an opportunity to present evidence,
and argument and to examine and cross-examine witnesses, either per-
sonally or by his counsel or agent, and
(11) may recommend to the approving authority that a party to the inquiry
. be paid a fixed amount for his costs of the inquiry not to exceed $200 and the
approving authority may in its discretion order the, expropriating authority -
to pay such costs forthwith. _ -
2. "owner" and "registered owner" are defined in the Act as follows:
"owner" includes a mortgagee, tenant, execution creditor, p person entitled
to a limited estate or interest in land, a committee of the estate of a mentally
incompetent person or of a person incapable of managing his affairs, and a
guardian, executor, administrator or trustee in whom land is vested;
"registered owner" means an owner of land whose interest in the land is -
defined and whose name is specified in an instrumentin the proper registry,
land titles or sheriff's office, and includes a person shown as a tenant of land
on the last revised assessment roll.
3. The expropriating authority, each owner who notifies the approving'
authority that he desires a hearing in respect of the lands intended to be
expropriated and any owner added as a party by the inquiry officer are
parties to the inquiry. '
