(James Fitzgerald photo) Juicy reds for good eating Now is the time to buy lots of .fresh Ontario tomatoes 'while they're available in all. their glory, for preserving or just plain good eating, say the marketing specialists at the Ontario Ministry of Agriculture and Food. Tomatoes are at their peak during the latter part of August and It's tomato time BYGRACE BIRD HOME ECONOMIST TOMATOES THEY'RE IN THE JAR Red, ripe tomatoes! What a beautiful sight! That is, as long as you can safely preserve the quantity you have grown and have them ready to enjoy next winter. Tomatoes may be frozen, canned or used in relishes, sautes, catsup and juice. 41/us look at the frozen and canned products here. First, the frozen. Select fully ripened fruit that is free from blemishes. Scald in hot water to loosen the skins. Cool immediately in cold water, Peel and core. They may then be frozen as is, addipg. one teaspoon salt per quart, or stewed 2-3 minutes. Stewing will prevent a tough, stringy product when unthawed. Pack in plastic containers or glass jars leaving 11/2" headspace to allow for expansion when frozen. Use in cooked dishes only as the fresh appearance is not maintained in freezing. For canning tomatoes, begin by washing and then scalding in hot water to loosen skins. Dip in cold water, remove skin and core. Half fill the hot canning jars with tomatoes. Dissolve 1/4 tsp. citric- acid (available in drug stores) and 1/2 tsp. pickling salt per pint jar in 1 tablespoon boiling water. Add to jar. Fill the rest of the jar with tomatoes. Add hot tomato juice or water'. Slip a knife down between jar and: tomatoes to release air bubbles. Finish adding juice but leaving 1/2" headspace at the top of the jar. Cover jar quickly with a hot lid and screw down jar ring according to type of jar used. Place in boiling water bath processor and process in rolling boil, 55 minutes for pints*, 60 minutes fo(r quarts. Remove jars carefully when time is up and place on a thick towel to cool. Let jars cool at least 12 hours. Test for seal ac- cording fi) manufac- turer's suggestions. Store in a cool, 'dry, dark location for best results. Always remember to destroy without tasting any home canned product which looks or smells abnormal. But why citric acid and boiling water processing you ask? Citric acid is essential in raising the acidity of tomatoes into the range mbe processed in a water bath processor rather than a pressure canner. Since tomato varieties and ripeness change the acidity, it is recommended that it be added to all home canned totnatoes. The boiling water bath processing time -is to ensure that all of the product has been thoroughly heated, ex- cess air is driven out and 'a good - vacuum seal is created, ensuring a safely canned product. Don't take chances. Can and freeze your products caefully. Your family's health depends on it. Right now thousands of acres are being harvested. Ontario tomatoes are available by the pound but many retail stores also sell them in four - quart baskets for you convenience economy. To he. sure of the number of tomatoes you'll need for preser- ving, check the recipes you plan to use. Jot down the amount needed for each recipe, times the number of batches you plan to do. Remember that 1 pound is 3 to 4 tomatoes and in a 4 -quart basket there are about 6 pounds, or 18 to 24 medium tomatoes. Look for firm, plump tomatoes with a uniform red color. If the tomatoes aren't ripe, leave them at room temperature away from 'direct sunlight. n When they are ripe, plan to use tomatoes within 1 week. If you're preser- ving, don't store tomatoes but use them as soon as possible. Tomatoes are great fox lots of good summer eating. A cool, fresh, \ flavorful tomato goes \well in salads, in sand- wiches, or served in slices or wedges with other vegetables. Tomatoes make a tasty hot vegetable too. Try topping them with but- - Wed bread crumbs and cooked, crumbled bacon, then broil for 10 to 15 minutes. For a very appetizing luncheon idea, serve stuffed tomatoes. Cut thern, in half 'and scoop out the pulp, then mix the pulp with a filling. This can be a mixture of chicken, pork, ham or egg salad. They're delicious, light and cool on a hot summer day. GRAND BEND - Pineridge Zoo near Grand Bend has been a regular maternity hospital this summer. Owner Ted Relouw has been playing midwife to a stange assortment of mothers. The largest new family at the zoo are the coatumundis and countless 'number of the racoonlike South American babies are roaming the grounds. Two mother rhesus monkies are cradling new borns and the baby Llama is already growing quickly. The zoo's maternity mend is __alao. Aladin wooley, black and white four -horned sheep and twins were born to proud wild boar parents.
