Clinton News-Record, 1979-11-08, Page 44Page 42 Something hot for the party CREAM CHEESE PASTRY Makes about 36 pockets or 2 crusts for 8" pies 8 oz. cream cheese room temp. 8 oz. (2 stick`s) butter (not margarine) room temp. 2 cups all purpose flour With fork cut cheese and butter into small pieces in bowl - blend together with fork, or electric mixer. Sift flour into bowl. Blend with fork or fingers until smooth. Add a bit more flour if dough feels sticky. Wrap ball of dough in wax paper and chill in refrigerator, until meat mixture is ready. MEAT FILLING (Makes about 36 meatballs) 1/ cup bread crumbs 1/ cup milk 1 egg 1 pound hamburger 1 small clove garlic 2 tbisp. finely chopped onion. 1/4 cup wheat germ 1/2 tsp. dried oregano - or thyme or 2 tsp. dry dill 1/2 tsp. salt 2 pinches of pepper Turn oven to 375 degrees: Soak bread crumbs in milk in mixing bowl. When soft, stir with fork. Add egg and stir again. Add hamburger (crumble in small pieces) Put garlic through press and add onion, wheat germ and chosen spices, salt and pepper. Put all of the above in with hamburger, mix till well blended. Make your meatballs up and place on wax paper sheet and refrigerate till ready to use. Cut two 14" length pieces of waxed paper. Remove 1/2 dough from the refrigerator - sprink,)e a little flour on top of dough. Place between 2 sheets of paper. Roll until approx. lA " thick. Break 1 egg in bowl and set aside. Remove top paper and proceed to cut dough in 3" squares. Remove 1/ the meat from the refrigerator. Lift dough squares onto an ungreased cooking sheet. Place 1 meatball into the centre of each square. To form dough envelope pinch up 2 opposite, corners - pinch sides closed - Add a drop of beaten egg to help dough stick together. Set about 1" apart on the pan. Brush tops of envelope with egg. Cook for 30 minutes at 375 degrees if not lightly browned return to the oven for 10 minutes. Set your serving platter in oven for 3 to 4 min. - remove and serve your meatballs. By Joanne Pryce for Women's Day Out, Goderich SWEET AND SOUR MEATBALLS 11/21b. ground beef 1 12 -oz. can pineapple tidbits 1 pkg. of Club House Sweet & Sour Mix 1 cup diced celery 1 tbsp. milk. Combine 1 tbsp. of Club House mix with hamburg. Add milk and form into 30 small meatballs. Brown in frying pan with 1 tbsp. oil. Drain pineapple reserving liquid. Add water to make 11/2 cup. Add mix and stir. Heat until it comes to a slow boil and thickens. Add pineapple and celery to sauce. TUNA BURGERS 2 - 7 -oz. cans tuna, flaked 2 cups thinly sliced celery 1/2 cup olives or chopped peanuts 1/2 tsp. salt 2 tsp. grated onion 1 cup mayonnaise 2 tbsp, lemon juice 1/2 cup grated cheese 10 hamburger buns Heat oven to 450 degrees. Mix all ingredients except buns. Split and butter buns and fill with tuna mixture. Wrap each tuna burger in foil. Place in oven and heat 20 min. (or longer). Note: Tuna Burg. may be prepared ahead of time, wrapped in foil and kept in refrigerator until time to heat. Worcestershire sauce 1/2 cup finely chopped walnuts Blend together, all but nuts. Form into a single round ball and roll in nuts. Wrap in waxed paper and refrigerate till ready to serve. Serve with assorted crackers. By Rosemary Corriveau for Women's Day Out, Goderich CHEESE BALL One 8 oz. pkg, cream cheese, softened 3 cups cheddar cheese, grated 1/4 cup -sour cream 1/4 cup green onion, finely chopped Dash Worcestershire sauce Dash tobacco sauce Stuffed olives, sliced Chopped nuts Chopped red and green peppers Blend cheeses, sour cream, onion, Wor- cestershire sauce and tabasco sauce. Shape into ball. Wrap in foil. Chill_ until firm. Garnish with sliced olives, nuts or peppers. Serve with variety of crackers. Marion Shepherd Beta Theta Chapter Beta Sigma Phi CHEDDAR BREAD 2 cups all purpose flour 4 tsp. baking powder . 1 tbsp. sugar 1/2 tsp. onion salt 1/2 tsp. oregano 1/4 tsp. dry mustard 11/ cups shredded Cheddar cheese 1 egg beaten l cup milk 1 tbsp. butter, melted Stir together in a bowl, flour, baking powder, sugar, onion salt, oregano, dry mustard and cheese. Combine egg, milk, and butter. Add to dry ingredients and stir, just until moistened (batter is quite thick) . Spread in greased loaf pan. Bake in preheated 350 degree oven for 40-45 minutes. Skewer tester wil come out -clean when done. Cool 10 minutes, then remove from pan. Let cool 1 hour, then slice. Lookss, lovely on a large cheeseboard surrounded by various cheeses and clusters of grapes. Marg Hallam for Beta Theta Chapter of Beta Sigma Phi r CHEESE WAFERS Preheat oven to 350 degrees F. Combine'. 1/2 c. thick dairy sour cream 1/4 c. soft butter 2 c. grated cheddar cheese 1/4 tsp. Worcestershire sauce 1/4 tsp. salt Gradually blend in 1 c. flour. Knead in last of flour. Shape dough into a roll 2" in diameter. Cut into 1/4" thick slices. Bake on ungreased baking sheet for 12 - 15 mins. or until light golden. TO FREEZE: Wrap cheese roll and freeze. Partially thaw (about 1 hr.) and just before serving, slice and bake. Makes 2 doz. ONION -CHEESE WAFERS: Use basic recipe, but blend 2T dried onion flakes into butter mixture. BACON -CHEESE WAFERS: Use basic recipe but blend 4 slices cooked side bacon, crumbled, into butter mixture.
