GLUTEN FREE COCONUT CAKE
One-third cup of butter(margarine)
1/2 cup of sugar
2 eggs
1/4 cup of Crisco oil
1 tsp. vanilla
1 cup of Celimix pastry flour
1 pkg. lemon instant pudding mix
1/2 cup coconutl tsp. baking powder
salt
Mix all these ingredients, then add 1/2 cup of
milk.
Bake in a well greased loaf tin (small) at 375
degrees for about 3/ of an hour.

CHRISTMAS CHERRY
ALMOND CAKE
1 cup butter
1/2 cup almonds
11/2 cups glace cherries
2% cups sifted flour
2 teaspoons baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon extract
11/4 cups granulated sugar
4 eggs well beaten
11/2 tablespoons lemon juice
1 tsp. almond extract
1/ cup milk
Mix for light fruitcake.. Use greased and lined
Targe size Christmas cake tin 8 x 8 x 31/2 inches.
Bake at 300 degrees (slow oven) for 11/2 to 134'.

SNOWMAN CUT-UP CAKE
1 baked 13 x 9" cake, cooled
4 cups whipped cream
1 andone-third cups flaked coconut
Small black and red gumdrops
Candy cane
Cut cake as shown in diagram 1. Arrange
pieces, as shown in diagram 2, on large tray.
Place a small amount of whipped creamy
between cake pieces to hold them together. Then
frost cake, rounding off corners to create a round
appearance. Sprinkle with coconut.
Use black gumdrops for eyes and five buttons,
and red gumdrops for nose and mouth. Hang
candy cane on slanted arm and make a black
paper top hat to place on his head.

WHITE CHRISTMAS CAKE
3 eggs
1/2 lb. butter
1 cup gran. sugar
1 tsp. baking powder
\\1 tsp. baking powder
2 tsp. lemon, vanilla or almond extract
1 lb. bleached raisins
1/2 lb. chopped cherries
1/4 lb. orange peel
.1 cup shredded coconut
3 slices pineapple
15 oz. can crushed pineapple
3 cups pastry flour
Mix in order and bake in slow oven for 2 hours
or until done. Pans should be lined with brown
paper before filling with batter. Cake does not
need aging.

CHERRY LOAF
2 cups flour
1 tsp. baking powder
1 cup margarine or butter
1 cup white sugar
3 eggs
1 small package red cherries (or more)
1/2 cup milk
1 tsp. cherry juice or vanilla
Cream butter and sugar. Add eggs, gradually
with the milk, flour and baking powder. Add
cherries which have been cut and floured.
Bake in a loaf pan at 325 degrees for about one
hour.

3 cups chopped apple
1/2 cup dessicated coconut
2 cups white sugar
11/2 cups Crisco oil
2 eggs
2 tsp. vanilla
1 tsp. each salt, baking powder, soda and cin-

Bake: 350 deg. 45 min. in a 9 x 13 pan.

MY CHRISTMAS TREE CAKE
11/2 cups margarine
2 cups sugar (white)
4 eggs
3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
Cream margarine and sugar and add eggs, one
at a time. Mix dry ingredients together, add to
margarine, sugar, egg alternately with milk.
Bake in four round pans 9", 7" 5", 3" or
whatever will stack to make a tree. Bake at 350
degrees for about 20 to 25 minutes.
When cool put tree together with jam. Best on
a high cake stand. Then frost with Miracle Icing.
MIRACLE ICING
1 cup white sugar
1 egg white, unbeaten
1/4 teaspoon cream of tartar
1/2 cup boiling water
1 teaspoon vanilla
Mix sugar, egg white and cream of tartar
Add boiling water, beat at high speed till stiff.
Add vanilla.
Cover tree with frosting - then sprinkle, it with
coconut that has been colored with green food
color. Add a few red candies and red birthday
size candles.
This is a family favorite every
