LEMON BARS
Base:
1/2 cup mer or margarine
2 tbsp. gown
1 cup all-purpose fly

Grated rd and juice of 1 lemon
1 tbsp. cornstarch
1/ cup rater
Topp g:
Pinch salt
2 egg white
1 cup white sugar
1 cup dessicated coconut
1 cup shredded qua
Bake Base in 325 degree F oven for 15 rriimnes
in .8 inch x 8 inch pan. Cool_
Cook filling on top of stove until thick. Spread
cooled filling over cooled base_
Make topping, beeting egg whites until very
thick and stiff. Add sugaxi gradually.
Fold in 1 cup dessicated coconut. Spred over
filling and sprinkle the % cup ceded coconut
over top.
Bake in 325 degree F oven for 20 minutes or
until golden.

CHRISTMAS FRUIT BARS
% c. butler or margarine
% c. sugar
1 tsp. grated orange rind
2 Tbsp. frozen orange juice concentrate
1/4 tsp. almond extract
114 c. sifted flour divided (see below)
1,4 tsp. baking soda
1/4 tsp. sale
1 egg
2-3 c. chopped glace fruit
1/2 c. chopped nuts
Sift and measure flour. Measure fruit into
small .bow.l. Mix 1/4 c. flour with fruit (if some
cherries are whale, cut in half.) Mix butter,
sugar and orange rind. Beat for 5 minutes. Add
orange juice .concentrate and almond extract.
Add remaining flour : (1 cup), baking soda and
salt. Beat well and add egg. Beat again. Fold in
fruit and nuts.
Turn into buttered 9" x S" pan. Bake at 350
degrees F for 16 to 18 minutes. Do not overbake.
Cool and frost with Orange Frosting.
ORANGE FROSTING
2 Tbsp. butter
11/,4 c. icing sugar
11/2 tsp. frozen orange juice concentrate
Beat combined ingredients till smooth and
spread on cooled Christmas Fruit Bars. Cut into
1" or 11/2" squares (very rich).
Freeze well if carefully packaged.

MINCEMEAT SQUARES
11/2 cups rolled oats
1 two-thirds cup all-purpose flour
1 cup brown sugar
3/4 cup shortening
1 tsp. baking soda
1 tsp. salt
28 oz. can mincemeat
2 apples pealed and chopped
1/4 cup brandy
2tbsp.rum
Mix all dry ingredients and shortening with your
hands until fine and crumbly. Place two-thirds in
bottom of 11 x 7 or 9 x 9 pan and pat down. Add
apples to mincemeat then rum and brandy.
Spread on top of crumb mixture. Sprinkle last
one-third of dry mixture on top and pat down.
Bake: 325 deg. for 35 min. 350 deg. for 30 min.
until golden.
Serve warm with vanilla ice cream.

31b. spy apples
3A lb. ground suet
1 Ib. sticky raisins
1 lb. currants
1/4 lb. mixed peel
1 raw lemon and
1 raw orange ground fine.
1 tsp. each cinnamon, allspice, cloves, mace and
salt.
2 lb. brown sugar
1 cup brandy

LEMON SQUARES
1/2 cup white sugar
3A cup butter or margarine
1/2 cup coconut
11/2 cup soda biscuit crumbs
2 tblsp. milk
Mix above to crumbs. Spread half of mixture
in 8 inch greased pan.
FILLING
1 cup white sugar
2 heaping tblsp. cornstarch
1/4 tsp. salt
Juice and rind of 1 lemon (I use Real Lemon)
Butter (size of Walnut)
3A cup hot water
Cook in double boiler. Spread on crumbs. in
pan. Add remaining crumbs, spreading on top of
filling.
Bake 20-25 minutes at 350 degrees.

MYSTERY CAKE (CHRISTMAS SQUARES)
Mix together:
1/21b. butter,
2 pups all-purpose flour, and
1/2 cup brown sugar.
Press above in bottom of 8 inch pan firmly.
Mix:
1 cup chopped dates
1/2 cup coconut
1 cup chopped walnuts
11/2 cups brown sugar
2 tbsp. flour
1/2 tsp. baking powder
1/2 tsp. salt, and
2 eggs
A few Maraschino cherries cut up
Beat eggs and add other ingredients. Pour
over shortbread in pan. Bake in moderate 350
degree oven for 30 minutes or until golden brown
on top. Cut in squares.
