The grandmother needs help as much as
the young wife and all should make it a
point to help a little and make the dey one
of general °moment.
It is not now considered the right thing
to overload a plate with more food than can
be eaten and too many good things are
usually set before us on this day to allow of
little more than tasting of each. It is
noticeable that few people sufler from In-
digestion after their Chrietnitte dialler.
Deliberation in eating combined with laugh-
ter andenerriment give the dyspeptic for the
time a good digestion. It was the old cus•
tom to place all the viende upon the table,
and to begin the dinner with the turkey
and the accompanying vegetables. It is ap-
propriate to follow the old way leaving the
modern etyle of serving a dinner in courses
to every -day occasion if we like.
In many homes the Christmas break-
fast is of as much account as the dinner
although the cliehee are less in number.
Cihicken is usually served in a pie or boiled;
baked sweet or white potatoes, cider apple
sauce, white and brown bread, with coffee
and real cream, form a good and stifficient
bill of fare. The following is a good wee', to
make the chicken pie :-
Cumenser PIE. -Boil the chiekens in just
water enough to cover them, and when ten-
der take out and carve as if for the table.
Remove the skin if it is very thick. Have
ready a deep baking dish lined with a thick
paste, rolling it about twice as thick as for
common fruit pies. Sprinkle each layer of
thicken with a little salt and pepper and
flour. Fill the dish nearly full with the
liquon4eavhich the chickens were boiled,
addidgeelittle butter if liked. Cover with
an uppeen crust closing the edges very care-
fully and ornamenting the top with leaves
cut from the paste.
Do not omit to cut a piece from the upper
arust as severe sickness frequently follows
eating a pie which had no opening in the
erupt or had become closed by the rising of
the paste in cooking. A good crust foe
chicken pies is made by taking the proper.

BRO READ. -T wo cups otdInilian meal,
two cup of rye meal, one cup of flour, one-
half cup of molasses, one and one half pints
of sweet milk, one teaspoonful of soda, one
tablespoonful of vinegar. Add the vinegar
the last thing. Pour into a mold and steam
three hours. Remove the lid and set in the
even ten minutes.
For the dinner any or all of the following
list are timely : Roast turkey, cranberry
sauce ; glazed ham, apple jelly; baked
spare rib, apple sauce; mashed potatoes and
turnips, canned tomatoes and corn, sweet
potatoes, boiled onions and squash; brown
bread and white rolls; boiled tongue, press-
ed corned beef; celery and cold Blew; sweet
and sour pickels ; mince, pumpkin and apple
pies with cheese; plum and boiled Indian
pudding; fruit cake; apples, raisins and
CRANBERRY SAUCE. -To one quart of
berriee add one pint of sugar, and one-half
pint of water. Cook together about fifteen
minutes then rub through a sieve and pour
into small cups to mould. By adding the
sugar at first the berries retain their color
better than if cooked without.
ROAST TURKEL-After drawing and rin-
sing the turkey in several waters prepare a
dressing by using to three gills of bread
crumbs from the sof b portion of a loaf, one
teaspeonfiil of salt, one of sage, a little pep.
per and a piece of butter half as large as an
egg; then add a spoonful or two of milk to
;neaten it. If liked an egg may be added.
Roast slowly and baste often. Be sure to
give it plenty of time to cook without need
of hastenieg the fire and burning it at the
last.
GLAZED HAM. -Soak the ham about
twelve heath then trim any uneven edges,
wipo dry and cover the cut portion with a
aste made of flour and hot water, lay it skin
own in the dripping pan and add water
enough to keep it from burning. Bake five
hours or about twenty-five minutes to a
ound. Baste now and then to prevent the

egg then make a paste by allowing to each
cup of powdered cracker enough milk to
thicken and a teaspoonful of melted: butter.
Spread thief evenly ever the ham a quarter
of an inch thick and set to brown hi a mod-
erate oven. Garnish with liced pickled
beet.
ROAST SPARE Rm.-Covered with a
greased paper until it is about half done,
then remove it and dredge with flour ; baste
often with its own gravy. Just before tak-
nig it up eprinkle thickly over the Mulatto
fine bread crumbs seasoned with powdered
sage, pepper and sett and if liked a very
email onion minced tine, let it cook five
minutes then baste once more. Skim the
fat from the gravy, add one half cup of hot
water, thrciteued with browned flour and
tstrain. This is tater a rule given by Meilen
Harland and is an improvement on the caxe-
lose method by which some cooks dry and
spoil a nice epee rib.

three pounde of rid/singe boiled until, very
tender. Mia the mince well, adding a col -
fee cup or more of the raisin liquor and
peaeh-pickle vinegar or any Oh0100 sweet
pickle juice until the meat le suffieiently
nutlet. Reserve a few of the boiled •raisins
to lay over the pies with small bits of but-
ter before putting on the upper orusa

lasses, one half ce n of water, one table-
spoonful of butter, a scant half teitepoonful,
of cinnamon or nutmegs, one-quarter tea-
apoonful of salt, thee tablespoonfuls of

vniegar. Bail altogether twenty minetes.
Leather SAITGE. --Cream one heaping cup
of eugar with a want half cup of butter;
add one egg beaten light, a teaspoonful of
nutmeg and the juice with half the grated
peel of one lemon. Beat hard five rrintutee
then add three 1 ableepoons of hot water
one at a time. Pour into a email tin pail
and set in the top of the teakettlewhkh
must be kept boiling until the Banco is heat-
ed, but it must riot boil. Stir constantly.
1.-nuat Ponnirto.-A pound of bread or six
large crackers relied fine, one quart of
milk, six eget!, a tablespoontul ot flour, a
cup of sugar, one nutmeg!, e teaspoonful of
cinnamon, one-half teaspoonful of clove, a
piece of butter the size oi an egg, the same
quantity of chopped Just a,nd a pound of
raisius. Boil the milk, eoak the bread over
night in it, then the other ingredients wil-
mix with it readily. Boil four hour e in a
pudding mould. Serve with a rieh sauce.
STEAMED INDIAN PlIDDiN0.-000 pint of
sifted Indian meal, onedealf pint of unsifted
rye meal, one pint of sour milk, three table-
spoonfuls of molasses, one teaspoonful Of
salt and one large "teaspoonful of soda. Mix -
all the ingredients together excepting the
soda which is to be dissolved in a little
boiling water and stirred well into the
mixture. Add one-half cup of matins
rolled in flour. Steam in a tin mould about
four hours.
Ivory Tusks Filled With Lead for the Eng-
lish Market.
The London and Liverpool ivory sales
have just been concluded. An interesting
feature of the London salewas the offer of
six tons of what was termed " Stanley's
ivory." It was the first lot of ivory sent by
Mr. H. M. Stanley from the Congo. It was
forwarded to the Belgian Government, from
from whom it came to London. The qualiey
and weight were very good. One parcel of
4 cwt.) knocked down to Rodgers & Sons,
the Sheflieid cutlery inseaufactarere, aver-
aged about three teeth to the hundred
weight. Ivory is now so freely used for so
many purposes that there is seine peril of
1 the elephant being exterminated. Mesers.
Rodgers' coneumption is 25 tons per annum,
and includee Gaboon, Angola and Niger,
East Indian, Cape, and Egyptian. 'the
large tusks weigh from 50 pounds to 100
: pounds each; middle from 25 pounds to 50
pounds each, and small from 3 pounds to 10
pounds. The firm's average weight, are 35
pourds. Twenty-five tons contain 1,600
I tusks of 35 pounds each, and as each ele-
phant provides only one pair, it follows that
at least 800 elephants per annum must suf-
fer from Rodgers & Sons alone in their out-
, lery and other productions.
Very little Egyptian ivory has recently
; come to hand. The Cairo merchante buried
their rreaeieres-dueigig the Soudan -war to
keep them out of the Mahdi's hands; and
even now they are reluctant to send to mar-
ket. What is sent is the result at hoarding,
not huuting: Egyptian ivory, which is
I mainly sold. in London, is largely used by
cutlery manufacturers and in other Sheffield
industrie, s as well as by pianofoi te makers

of West Coast African, which is growing in
favor for hafting the higher classes of table
cutlery.
The ivory dealers of Africa are very good
1 hands at obtaining full value for their goods ;
! and some of the Sheffield firma find that
they are not novices in fraudulent trading.
1 They can load ivory quite as cleverly as
Lancashire can load cottons. By pouring
lead into tho cavity of the teak the weight
is greatly increaeed ; and there is no possi-
bility of discovering the deception until the
ivory has paneed through various hands to
the cutlery or other manufacturer. Then
the workman finds the saw grind against
the lead, sometimes snapping the steel teeth.
One Sheffield firm recently found lead em-
bedded in several elephants' tueks, from 8
pounds to 12 pounds weight in each. As
ivory is worth 12s. per pound, there is a
profit in ,selling load at that price.
At London the prices of soft Indian and
Eastern African tusks, wit Egyptian, Cape,
and West Coast African were dearer ; but
in the opinion of practical brokers, ivory has
not much altered for fifteen years for while
eome qualities are now of greater value

The Inerefacteue of liquid carbonic acid
is new an important industry in Berlin,
where, according to Indwstr lea, a company
establiehed for this Impose are making
daily over half a ton of this commodity.
The acid is sent out in steel bottles, each,
containing' 'from' 'seventeen to eighteen
pounds, and tho price °barged is a dittle g
under one shilling per pound. The acid
contained in a bottle when expanded into
gas occupies over ten thousand cubic feet.
It isprincipally used in the rnanufaotyare
importantten use of cerbonic acid was est:'
ed as early as 1879 by Dr. Raydt of an -
over for the raising of wrecks, who demon-
strated the possibility of this application by
an experiment at Kiel. The apparatus
consisted of a steel bottle containing the
liquid acid, and a collaeped. canvite bag
placed over the neck of the bottle. When
the whole TEI submerged, and attached to
the object to Inc raised, a cock is opened,
and tele liquid in the bottle allowed to
expandinto the bag, inblaeing the latter,
and thus ca,mizzg it to rise. Another applica-
tion was introduced by Herr Krupp of
&leen for compreesing liquid steel, and d
large plant for the production of liquid
carbonic acid is at work at the Essen
factory.
