Storing milk
Milk is important in the
diet because it is a major
source of calcium,
vitamin D and riboflavin,
one of the B vitamins.
However, to maintain the
high quality, food value
and fresh flavor of milk,
handle it carefully in the
home and store it
properly, say the food
specialists at the Ontario
Ministry of Agriculture
and Food.
Buy fresh milk (in-
cluding.whole, 2 per cent,
skim)` from refrigerated
counters only. At home,
store in the refrigerator,
removing the milk only
long enough to pour the
amaunt_needed_- for im-
mediate use. Keep milk
tightly covered to prevent
absorption of undesirable
'flavors from other foods.
Never return any
unused poured portions to
the original container.
Store them separately,
covered.
Unopened canned
milks can be stored at
room temperature,
preferably in a cool, dry
area. Once opened, store
the milk, tightly covered,
in the refrigerator for up
to one week.
Store unopened
packages of skim milk
powder in a cool, dry
place. They will keep well
for several months. Once
the package is opened,
use within 1 to 2 months.
After each use, reclose
the package tightly to
prevent the powder from
absorbing moisture from
the air and becoming
lumpy and stale. Once the
powder is mixed with
water, treat it like fresh
milk. Keep it covered and
keep it cold.
Milk makes an im-
portant contribution to a
well-balanced diet. Treat'
it with care to benefit
from all it has to offer.
