Have the fire clear and the gridiron hot

meat, which would allow the juices to es-

the requisite time; the etate of the fire and
the thickness of the meat will have to deter-
mine that. You must simply learn by ex -
pomace. Given a proper fire, and a steak
three quarters of an inch thick, and eight
minutes will suffice. Lay it on a hot 0101,
and not until this moment will you, season it.
Dot with bits of butter aud serve hot. If you

to profit by your good fortune. Peel a pint of
them and fry in a little better; season and
