Batter

1/4 teaspoon salt
1 tablespoon sugar
4 beaten eggs
11/2 cups milk
2 tablespoons butter, melted

MICROWAVE OVEN
Cheese Blintzes are a delightful way to serve cottage cheese. Tender
crepes are wrapped around a delicately spiced cottage cheese filling and
served with a Strawberry Rhubarb Sauce or any fresh fruit. Very nice for
an evening snack or at a leisurely company brunch.
Mix dry ingredients. Add combined eggs and milk
and beat until smooth. Stir in melted butter.
Refrigerate 2 hours. Heat enough butter in a heavy 7 -
inch frying pan to coat lightly. Pour in 2 to 3
tablespoons of batter and tilt to spread evenly in thin
layer. Cook over medium heat, on one side only, until
top is dry and blistered (1 to 2 minutes). Turn out,
browned side,up, on clean cloth and cool. Repeat until
all batter is used.
Filling
2 cups cottage cheese
1 egg yolk
2 tablespoons sugar
Dash salt
1 teaspoon grated lemon rind
1/8 teaspoon cinnamon
1 tablespoon butter
Press cottage cheese through sieve. Add remaining
ingredients and mix well. Place about a tablespoon of
filling on browned side of each pancake.. Fold in op-
posite sides and roll up. Place on greased baking pan,
brush with melted butter and bake at 400 degrees F
until browned (15 to 20 minutes). Makes about 16
blintzes.

Put ingredients in a blender.
Operate on high position for 30 seconds.

DESSERT CREPES
1 quart strawberries rinsed and hulled
Chop 1/2 cup strawberries for cream filling. Set
aside.
Slice remaining , strawberries fon sauce. Set
aside.
CREPES
1 cup sifted all-purpose flour
1 tbsp icing sugar
1/8 tsp. salt
3 eggs
1 cup milk
1 tbsp brandy
butter
Sift together flour, icing sugar, and salt. Beat
eggs until blended; add milk and brandy. Add
egg mixture to dry ingredients, beating until
very smooth. Heat a heavy 7 -inch frypan and
grease lightly with butter. Lift off heat and add 2
tablespoons of the batter. Quickly tilt the pan to
spread batter evenly over base. Return to heat;
brown crepe on each side (about 1 minute).
Place on waxed paper.. Makes 20 crepes.
CREAM FILLING
1 pkg. (8 oz.) cream cheese
1 tbsp light cream
2 tbsp sugar
1/2 cup strawberries, chopped
Combine cheese, cream, and sugar in
saucepan. Heat until mixture is of spreading
consistency. Add chopped strawberries. Place a
little of the mixture at one end of each crepe.
Spread to edges. Roll, then tuck ends under to
prevent filling from oozing.
STRAWBERRY SAUCE
1/2 cup butter
3/4 cup orange juice
1/2 cup sifted icing sugar
31/2 cups sliced fresh strawberries (reserved)
Heat and stir butter, juice, and icing sugar in
saucepan. Heat crepes in this sauce. Remove to
platter. Add strawberries to the sauce. Toss to
glace the berries. Serve, allowing 2 tablespoons
of saucy berries to each crepe.
