BARBECUED BEEF PATTIES
1 pound ground beef
1/2 cup crisp whole wheat flakes, slightly crushed
1 teaspoon salt
Dash of pepper
1/2 cup milk
1 egg
1 tablespoon margarine, melted
1 cup all-purpose barbecue sauce, any flavour
Combine beef, cereal, salt, pepper, milk, and egg.
Form into six patties. Brown patties in margarine in
skillet, turning once to brown both sides. Add bar-
becue sauce. Cover and simmer about 10 minutes.
Makes 6 patties or 6 servings.
MEATBALL CARBONNADE
A LA FLAMANDE
4 strips bacon
2 pounds ground beef
2 eggs
1/2 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
Bouquet Garni
4 cups thinly sliced onion
2 tablespoons flour
1 can or bottle •(12 ozs) beer
1 cup beef stock
2 teaspoons brown sugar
2 teaspoons vinegar
1/2 teaspoon thyme
2 tablespoons minced fresh parsley
+Made of 3 sprigs of parsley and 1 bay leaf, tied
together.
Cook bacon until crisp, drain on paper towels,
crumble and set aside. Pour off most of excess fat into
small bowl, leaving thin film in bottom of skillet.
Combine ground beef, eggs, bread crumbs, salt and
pepper; mix well. Shape into walnut -sized balls.
Brown meatballs in skillet, a few at a time, shaking
skillet to keep them round. Remove meatballs to 3
quart casserole. Bury the bouquet garni in the meat.
Saute onions in remaining fat in skillet 10 to 15
minutes, until golden. Add onions to casserole. Stir
flour into remaining fat in skillet. (If mixture seems
dry, add a little reserved bacon fat.) Cook over low
heat, stirring constantly, until the roux is amber color
being careful it does not burn. Pour in beer and beef
stock; bring to a boil, stirring constantly. Boil 1
minute, then add sugar, vinegar and thyme, simmer 2
to 3 minutes. Pour sauce over meat and onions. Bring
mixture to a boil on top of stove. Cover tightly and
bake in 350 degree oven 45 minutes. Discard bouquet
Garnish with reserved crumbled bacon and snipped .
parsley. Serve with boiled potatoes. Yield 6-8 servings.

It doesn't really have to be summer to enjoy bar-
becued food. These Barbecued Beef Patties come
right from your own kitchen and should be a hit with
most families. Servethem with warm bread, a tossed
salad and maybe some of your own french fries.
