always the noisy half of
the earth's population.
One segment of creation
can refute this age old
theory. Because, --- the
chirping of crickets
which fills the air these
summer evenings (and
well on into the night) is
caused entirely by the
male of the species.
Female crickets don't
chirp. And if you are
interested in further
"cricketabilia" ask me.

guests last week of the
Rev. James Broadfoot
and his family. While in
Clinton the Tyers visited
many points of interest in
the area.

Last weekend Mr. and
Mrs. .Frank Cummings;
Mary Street receiver' a
long distance phone call
from their son and his
wife, Dr. Harry Cum-
mings and Marian of
Indonesia. Connections
were very clear.

A family gathering of
38 took place from last
Friday evening until
Sunday at the home of
Mr. and Mrs. Garnet
Harland, RR5, Clinton. It
was the first reunion for
the Hardcastle kindred,
Phyllis' family, as they
gathered from various
parts of ,Ontario - the
furthest coming from
Petawawa in the Ottawa
Valley.

Steve and Rosemarie
Cooke, Joseph Street,
have returned from a
three week African safari
(the real thing) spent in
Botswana, southern
Africa. The shoot took
place on private far-
mlands where the game
is managed as an
auxiliary crop. Highlight
for Rosemarie was her
shot of an Impala
notation of which was
subsequently entered in
the Roland Ward record
book. Watch the News -

Steve will be writing in
detail of the three week
adventure.

This is of 'particular
interest to Senior
Citizens. The Ontario
ministry of housing is
conducting a survey to
determine the demand
for additional senior
citizen housing in Clinton
and surrounding
municipalities. This
estimate of the number of
senior citizens, living in
or around Clinton whose
housing is inadequate' or
beyond their financial
capabilities, will be made
by the ministry.
This can only be done
from information
gathered through ap-
plications from Clinton
and area residents filed
with the Huron County
Housing Authority. So,
senior citizen residents
interested in assisted
rental accommodation
may obtain application
forms from the Clinton
municipal offices at the
Town Hall, Albert St.
Clinton or from the Huron
County Housing
Authority, 53 Stanley St.
Goderich. After com-
pleting the form it should
be returned to the
Housing Authority at the
above address.
Only by, those in-
terested sending in the
forms, will the need for
additional senior citizen
housing in this area be
determined.

For good pickling results
As you prepare to
pickle this year, make
sure you have a tested
recipe to follow. The food
specialists at the Ontario
Food Council, ministry of
agriculture and food,
point out that it is very
important to follow the
recipe step-by-step using
the types and proportions
of ingredients required. It
can make the difference
between a good batch of
pickles and an un-
satisfactory batch.
Vinegar is an im-
portant ingredient in
pickles, .both for its
preserving qualities and
its flavor. Be sure to use a
commercial vinegar
(labelled between 4 and 6
per cent acetic acid).
Don's use a homemade
vinegar since it may not
have the needed acid '
strength. Never dilute the
vinegar. For milder
flavor add extra sugar
rather than less vinegar.
Use white vinegar for
light-colored pickles,
such as onions and
cauliflower. Use cider
vinegar for a special
flavor in darker pickles
and relishes.
Salt is important both
for its preserving
qualities and its flavoring
effect. Use salt labelled
specifically for pickling,
such as pickling salt or
coarse salt. Avoid free-,
running table salt which
contains agents that can
make the brine cloudy.
Sugar acts as a
preservative and con-
tributes to the flavor. Use
white sugar for light-
colored pickles and
brown sugar if you want
,special flavor .and don't
Mind darker pickles.

Fair Queens attend CNE
The annual "Miss CNE reigning over 20 days of
- 'Queen of the Fairs" the Exhibition.
Pageant was the The entire event was

the centennial Canadian
National Exhibition on
August 16.
This year, 92 beautiful
queens representing
agricultural societies
from all across Ontario
competed for the Miss
CNE crown and honour of
staged in the main arena
of the Coliseum com-
plex with prejudging in
the morning and final
judging in the afternoon.
The winner, Andrea
Bynkoski, 22,
representing Niagara
Regional Fair, was
crowned by Miss CNE
1977, Brenda Bomberry.
First runner-up was
Birgit Pfenning, 18, of
Richmond Hill and
second" runner-up was
Fern Livingstone,, 19, of
Markdale, Miss
Congeniality, as chosen
by the contestants, was
Nancy Kent, 19, of
Ancaster,
Clinton's Jan D ivok
was also present, 'but
didn't place.
Library News
For Kids

The beginning of
another school year is
fast approaching and
with it the end of another
summer of children's
programming at the
Clinton Public Library.
But, the fun isn't over
yet! .
This, Saturday at2
o'clock in the town hall
auditorium, the library is
presenting an afternoon
of children's films. The
feature "Rookie of the
Year" - a film about
summer, baseball and a
very skilled and different
player will be presented.
This film is suitable for
all aged children so don't
forget to mark the time
and date on your
calendar - and best of all,
admission is free!
Also, this weekend
marks the end of the
Huron County. Public
Library's draw an
original bookmark
contest. Remember this
contest is open to children
from ages 6 to 13 and that
the winning bookmarks
will be used throughout
the county libraries.'
Contestant may draw
anything they wish - a
picture, a pattern of lines
or shapes, anything as
long as it is drawn in
either black wax crayon
or black ink and is sub-
mitted on an official
entry form. If you haven't
entered this contest do so
today! Entry forms are
available at the library.
We ask all parents to
note that there will not be
any children's programs
held at the library on
Saturday, September 2.
However, programs will
resume on September 9.

and interest of the pickle.
Always use fresh, whole
spices each pickling
season. Old spices. give
off flavors, Ground and
powdered forms of spices
will cloud and darken the
pickling mixture. Place
whole spices in a small
cheesecloth bag. The bag
can be simmered with the
pickles and then removed
before pickles are
packed. write for the

Home canned tomatoes
Do you really have to
use citric acid when
canning tomatoes?
Michelle Marcotte, a food
consultant at Agriculture
Canada says yes. There
have been some low acid
tomatoes on the market
and citric acid should be
used in tomato canning to
give the required acidity
needed to prevent
spoilage.
Food consultants at
Agriculture Canada have
been recommending
adding citric acid in the
canning of tomatoes for
the last few years. There
have been conflicting
reports however, about
the elsistence of low acid
tomatoes in Canada.
To determine the
acidity of tomatoes.
commercial processors
and agricultural research
stations across Canada
were asked for in-
formation on the acidity
of the tomatoes from
their area. They reported.
that the acidity of tomato
varieties vary con-
siderably across Canada.
Furthermore, tomatoes
become even less acid as
the season progresses or
if the tomatoes become
overripe. Therefore,
there is the possibility
that consumers may use
tomatoes which are low
in acid for canning.
"Home canners should
make use of this in-
formation to guard
against any spoilage of
their tomatoes" says Ms.
Marcotte. "Do not 'use
overripe or soft ripe fruit.
Add citric acid to the
tomatoes chosen for
canning (1/, teaspoon per
pint or 1/2 teaspoon 'per
quart),' cold pack, then
procesls in a boiling water

process in a boiling water
bath for 40 minutes. If
you find the flavor of
canned tomatoes slightly
tart, add a little sugar to
taste (about 1 teaspoon
per small container).
By adding citric acid
and properly processing
in a boiling water bath
you can be sure of a safe
product.
