Naturally speaking
By Steve Cooke
Mushrooms are generally not thought of in the spring,
but as soon as the snow melts, many edible species start
to appear. Subalpinus mushrooms start popping up in
pine forests as soon as there are bare patches in the
snow. Because of its early appearance, it is virtually
impossible to confuse with any other species.
The St. Georges mushrooms is rumoured to appear
only on the 23rd of April. Despite the -fact that this is an
early mushroom and is most abundant in the spring, it is
occasionally found in early summer, and on the rare
occasion, in the fall. This particular mushroom should
only be collected by the expert, however, as it is easily
confused with the poisonous Patouillard's Inocybe.
Perhaps the easiest and safest mushroom for
amateurs to collect in the spring is the Morel. When the
weather has been sunny and mild, these little delicacies
make their sponge -like appearance along the fringes of
woods or in the middle of dirt roads where patches of
grass are growing. Apple orchards are also reputedly a
good gathering ground for morels.
Morels are easily recognizable by the fairly. deep
cavities between riblike folds. The morel is hollow and
may have either a round or oval cap almost touching the
ground or a long conical capon a long slender stalk . The
morel can only be confused with Gyromitras commonly
called the False Morel or Brain Mushroom. This
mushroom is also quite edible and just As tasty as the
true morel. It has a round head and appears bloated with
wavy folds.
Morels and Gyromitras must not he eaten fresh. Let
them dry for a few days and then soak them in warm
water for five minutes just before cooking. These
mushrooms can be stored for months by drying them. To
dry, cut them in two and either put them on a rack or
string them on cotton thread (not touching each other).
Dry them in the sun during the day, but bring them in
before the dew sets in the evening. When they are dry and
quite brittle, they can he stored in sealed jars away from
the light, When ready to use, soak in warm salty water
and cook as if they were fresh.
