JANUARY 12, 1978 New 4-H project for spring "Focus on Living", the 4H homemaking project with variety plus, will be offered in Huron County this spring. Open to all young people ages 12-26, whether they live on the farm or in town, this project gives participants an 'Opportunity to explore the meaning of the 4-H pledge and develop ways for'. following its guidelines. Quilting appears for the first time in a 4-4 project. All members will learn to make a sample of pieced quilting by hand. Seniors can explore the art of machine quilting to make placemats, hand bags or 'other articles. Members may also knit or crochet an article of their choice. Leaders will be responsible for teaching quilting but members wishing to learn how to knit or crochet can rely on friends, parents or grandparents. Outings and guest speakers will be quite in order. For example, meeting five can be scheduled any time during the project and provides the opportunity to go hiking or trailing or visiting a wildlife or conservation area - anything to do with our en- vironment and natural resources. Meeting six deals with safety so it might be the time to have a policeman or St. Johns Ambulance person come to a club meeting to discuss this topic. Leaders' Training Schools will be held as follows: in Exeter United Church, Exeter on Monday and Tuesday, January 16th and 17th; in Wesley -Willis United Church, Clinton on Thursday and Friday, January 19th and 20th; in Gorrie United Church, Gorrie on Tuesday and Wednesday, January 24th and 25th; in Salvation Army Hall, Wingham on Thursday and Friday, January 26th and 27th; in First Presbyterian Church, Seaforth on Monday and Tuesday, January 30th Serve parsnips for variety For delightful flavor variety, serve parsnips as one of the vegetables at supper tonight. Their sweet flavor and creamy color blend well with -Many 'foods and provide very enjoyable eating, say the food specialists at the Ontario Food Council, ministry of agriculture and food. Parsnips are a fall and winter .vegetable similar in shape to a carrot and belonging to the same family. They are in the supermarkets now and will be available through the winter. Look for Ontario parsnips. and choose ones that are firm, straight, smooth, and - free from blemishes. For sweeter tasting parsnips,..,hoose the larger ones. Parsnips keep well at refrigerator tem- peratures and can be stored in the vegetable crisper for up to four weeks. Use parsnips often while they're available and discover how well the sweet, nutty flavor goes with roast pork, beef, spare ribs, or poultry, and how well they combine in your favorite vegetable casserole or meat stew. Parsnips require little preparation before cooking. Simply trim the stem and root ends, then peel. Leave small parsnips whole and cut large ones into thin slices. A variety of cooking methods including baking, boiling, stir -frying, pressure cooking or steaming may be used to cook this versatile vegetable. Once cooked, parsnips may be topped with grated cheese afid buttered crumbs, or a cream sauce. Try them with a seasoned butter flavored with lemon, parsley, onion or chives, dill, tarragon, ginger, or cinnamon. All training schools will be held from 10 a.m. to 4 p.m. both days. in order for your com- munity to be involved in this spring program, please pass this' information on to people Hi your area who might be interested in sponsoring or leading a 4-H program at this time. 4-H is a valuable ex- perience and should be made available to as many young people as'possible. (News -Record photo) news ho m e news 1 Nutrition week coming to -Huron schools BY BEA McCLENAGHAN, HOME ECONOMIST, HURON COUNTY Today, many Canadians, young and old alike, are overweight and un- dernourished. This can be attributed to Canadians' sedentary lifestyle, ignorance of nutrition and failure to eat enough of ' the foods which provide the nutrients needed. As Canadians, we need to take a serious look at , our nutritional eating habits. Do you ever wonder why: the average four -person Canadian family spends $1,000 a year more on food than is required for nutritious and delicious eating; most Canadian adults are a cross between a cream puff and a ,jelly roll; Canadians spend about 38 per cent of their food dollar on meat and alternates - about 14 per cent more than is needed to meet protein requirements? Clinton -703 (January 23-28), attention will be focused on teaching proper nutritional in- ' formation in Huron' County schools. All schools in Huron County will be supplied with a "Nutrition Happenings Handbook of Ideas and Resources" prepared by the Ontario Ministry of Health. Teachers may use this to increase the nutritional awareness in classes from the kindergarten to the Grade 13 level. .. Every adult working with children has a responsibility to help prevent the present school-age population from growing up with the same misinformation, confusion and ignorance of nutritional health that characterizes their elders. Special programs scheduled for Nutrition Week include plannedactivities for all family members from the preschooler to dad. The following are some of the scheduled programs: a pre- school nutrition session at the Clinton nursery school; a discussion and demonstration program with a young mothers' group in Seaforth ; an all -grades -participating workshop at Turnberry Central School, 'Wingham; and a .program with the Belgrave Kinsmen Club. Parents, do you know what program will take place in your child's school during Nutrition Week? Why not check with your child's teacher? Teachers, have you referred to the handbook in your school for preparing a lesson in your classroom? As a -teacher, it is important for you to be aware that the eating patterns of your students affect their learning ability and behaviour. The fidgety, disinterested child could be exhibiting the signs of a "breakfast skipper". Your teaching efforts maye lost on a child too hungry/4o learn. It may be that teaching of good eating habits could be one of the most valuable contributions that you could make in preparing your student for life. The time to start on nutrition education is now.
