Christmas cake time
What could be more
delicious than a rich, moist
piece of Christmas cake full
of fruit and nuts. It's a treat
that almost everyone enjoys.
If you're planning to make a
Christmas fruitcake do it
now, so that there will be
plenty of time for it to age
before Christmas.
Aging is the final important
step in the.completion of your
fruitcake. It makes a good
fruitcake into a superb
fruitcake say the food
specialists at the Ontario
Food Cou,pcil, Ministry of
Agriculture and Food. This
step allows the whole cake to
mellow and take on the full,
rich flavor and moistness of
the fruits.
Fruitcakes are basically
butter cakes with just enough
dough to keep the fruit -a
nuts together. Dark fruit-
cakes are rich in color and
flavor and usually contain
plenty of fruit, seedless
raisins and pecans, or other
nuts. Light or white fruit-
cakes are light In color and
cakey in texture with white
raisins, almonds and smaller
quantities of fruit.
Use only fresh ingredients
in your cake, since the cake
will be stored for a long
period of time before being
eaten. Don't use last yesr's
leftovers. If you start
collecting the ingredients
now, you will be well
prepared for the day you
decide to bake. Allow at least
six weeks for a dark cake to
age and at least 3-4 weeks for
a light cake.
Once the cake has been
baked and thoroughly coole
wrap it in aluminum foil
wrap it first in a brandy - o
wine -soaked cheesecloth and
then in foil. The cake may
then be placed in a tightly
covered tin and scored in a
cool, dark, dry location. For
added flavor, resoak the
cheesecloth periodically in
brandy or wine.
Once a fruitcake has aged it d
may be frozen.

Bayfield formerly of Clinton,
beloved husband of Jean Ball,
passed away on Thursday,
October 27th, 1977 in his 68th
year. Surviving are two sons,
David of Clinton and Douglas of
Corbell, his father, Norman Ball
of Clinton, 1 sister; Jean (Mrs.
Dougall Campbell) of Mitchell, 2
brothers, Reginald of RR 1,
Bayfield, Clarke of Clinton, and 3
grandchildren. The late Mr. Ball
rested at the Ball Funeral Home,
153 High Street, Clinton until 12
noon Saturday thence to Ontario
Street United Church, Clinton, for
funeral service at 2 p.m. Inter-
