SLOW COOKERS
One of the newest kitchen appliances is the slow coker. The tang, slow simmering
of food known for centuries has been revived by this electric afipliance. A tentpera-
ture dial gives low and high settings and many have ah automatic setting which
allows the cooker to start at high and then switckta low; The low setting produces a
temperature in the range of 170 - 200 F, and the high will reach temperatures of up
to 280 F. These are well abouve the unsafe temperature range of 40 - 120 F.
For the busy cook, this appliance can mean freedom - simply combine ingredients,
set the temperature, and let the cooker do the work all day. The Juices from each
ingredient will give the meal an exceptional flavour.
Slow cooking can also be economical because you can use cheaper cuts of meat.
The long simmering will make then tender. High -protein peas and beans such as
lentils and soybeans which require long cooking are Ideal for a slow cooker.
