HOME CANNING - Why is it advisable
to add citric acid to home canned
tomatoes?
In • recent years, the varieties of
tomatoes available both in super-
markets and in home gardens have
rapidly increased.
Many cif the new varieties have an
extremely low acid level. Therefore, it
is necessary to increase the acid level
to the safe point. After filling each
quart, jar half -way, add to each, 1/2
teaspoon of citric acid dissolved in 1
tablespoon water. Then complete filling
and process as usual.
